Week 543 Weekly Menu

HAPPY SUMMER! It’s our first week of summer and, if you can’t tell, I’m in vacation mode! 😉 I’ve decided to give myself a mental break this summer. If I get a weekly menu done, fantastic. If I don’t, that’s okay! I have never given myself this kind of space around the weekly menu (I know, maybe might be a little crazy). That said, I know some of you will still be consistently planning, so I do promise to make sure a post is published where everyone can share their menus still. And I will make sure those posts go up on Sundays. Deal?

I really haven’t planned a menu yet for this week and it’s kind of awesome. Owen (my 5 year old) and I found ourselves alone last night, so we went on a date, where we ate burgers and fries and bought lots of ice cream at the grocery store. It was perfection. I do know we’ll have grilled chicken tacos and homemade hamburgers this week, and I’m going to hit up the farmer’s market this afternoon for some inspiration.

    Enjoy the summer! I teach, so summer is my most solid meal planning time! I’m happy to be back on track and cooking up summer produce…

    Sunday – Cheesburger wraps, watermelon
    Monday – Meatballs/sauce (on green beans or spinach…we really just like meatballs)
    Tuesday – Baked chicken tacos wraps and guacamole
    Wednesday – Balsamic chicken caprese-pesto paninis
    Thursday – Dinner out – sushi? – before show
    Friday – Salmon pasta salad
    Saturday – Probably pizza or takeout, as I pack for our trip

    Happy Summer!! Summer is my free time too and I like to have a menu planned just in case I am home to cook!! haha!

    Mon – Grilled Shrimp, Rice, Salad
    Tues – Chicken Enchiladas, Avocados
    Wed – Turkey Bacon Ranch Flatbread Sandwiches, Chips
    Thurs – Grilled Steak, Corn on the Cob, Salad
    Fri – Chili Dogs, Carrots & Celery
    Sat – Hamburgers, Potato Salad
    Sun – Chicken Parmesan, Salad, Breadsticks

    Monday: Tomato, Ricotta and Goat Cheese Tart
    Tuesday-Sunday: Vacation, making a dessert one night, dulce de leche molten cakes with banana ice cream

    Tu: grilled chicken tacos w/ Mexican rice & calabacitas

    W: my son had a friend over for a sleepover and we all made our own pizzas

    Th: chicken taco bowls w/ Tues leftovers

    F: Picnic at movies at the park while watching Honey, I Shrunk the Kids. Sandwiches, chips, fruit, popcorn, & licorice.

    Sa: out to dinner

    Su: grilled honey-sriracha chicken thighs w/ sesame noodle salad
