Week 545 Weekly Menu

Hi friends! I am SO glad I didn’t plan a menu last week…so many times this past week at around 4:00 my kids were in the middle or pure summer “funness” and I couldn’t bear to tear them away to go make dinner. We had quite a few lame-o dinners, but it was totally worth it!

This week I am planning a menu, mostly because I need a little guidance on my grocery shopping. I’m pretty certain we won’t be sticking to this completely, but at least we’ll have options and actual food in the house!

– Grilled Chicken Fajitas

– Fourth of July BBQ! Hamburgers, hot dogs and the like!
– I’m not entirely sure what our sides will be, but I think I’m going to make these Crispy Rosemary Potatoes per my little Anna’s request!

– Homemade Pizza (Honey Goat Cheese and Sausage Ricotta using this no-cook pizza sauce and crust recipe)

Braised Chicken with Rice and Veggies

– Leftovers

– Eat out night

    Sun: Chicken Parmesan, spaghetti, salad.
    Mon: Husband’s birthday at our family lake house! I’m making crab cakes, corn on the cob & coleslaw served with King’s Hawaiian rolls per his request.
    Tue: Happy 4th of July! We’re having a classic BBQ picnic with family.
    Wed-Fri: In DC on business trip.
    Sat: Big salad with grilled chicken, corn bread

    Monday: Black Bean and Rice Bowls, Guacamole and Fresh Salsa
    Tuesday: Chicken Adobo with Coconut Lime Rice and Peas
    Wednesday: Sesame Chicken Noodles
    Thursday: Pasta Bolognese and Broccoli
    Friday: Macaroni and Cheese and Salad
    Saturday: Caprese Salad with Crispy Prosciutto and Garlic Bread
    Sunday: Left Overs

  3. Sunday: Day at friends’ lake house….bringing shaved brussels sprout salad
    Monday: BBQ chicken pizza and Cauliflower mushroom crumble (Steph in Thyme)
    Tuesday: Cook-out (steak, corn on the cob, parsnip/kale gratin, butter horns)
    Wednesday: Chana masala and naan
    Thursday: Mexican sweet potato casserole (Spiralized)
    Friday: Leftovers
    Saturday: Out

    I’m going to try and plan for the whole week. It was so helpful when I used to plan and post that I’m looking forward to starting again.
    Sunday-Instant Pot Mango Chicken Tacos, Chips and Salsa, Pineapple
    Monday-Tofu and Veggie Stirfry, Rice Noodles, Apples
    Tuesday-4th of July BBQ with friends. TBD what we bring.
    Wednesday-Blue Apron and Fruit
    Thursday-Blue Apron and Fruit
    Friday-Blue Apron and Fruit

    Chicken BLT salad
    slow cooker beef tips, mashed potatoes, veggie
    smoked sausage, cabbage, noodles skillet
    Take-out – fried chicken, cole slaw, biscuits
    Enchiladas (new recipe)
