Hi everyone! Okay, I have another meal plan…three cheers for being sort of organized in the middle of summer! 😉

– Eat out night…again. We’ll be packing for our 4-week east coast trip, so just going to assume I won’t be cooking much that night!)

    Sunday – leftovers that my husband had left (and I’m back from a 3 week trip chaperoning high school students in Germany)
    Monday – Salmon, rice, yellow squash and salad
    Tuesday – burgers on the grill with salad and fries
    Wednesday – at the beach with the grands for the day!
    Thursday – tortellini with sauce
    Friday – out for restaurant week!
    Saturday – tbd

    Jane – have a great trip – we are heading west in two weeks – driving up the coast!

    Tues – Chicken Enchiladas, Salad
    Wed – Meatball Sandwiches, Chips
    Thurs – Eat out
    Fri – Grilled Burgers, Baked Beans, Carrot Sticks, Watermelon
    Sat- Taco Salad
    Sun – Marinated Grilled Chicken Breasts, Fruit Salad

    Tu: taco salad w/ ground turkey & baked tortilla shells

    Th: orange chicken w/ broccoli stir fry & steamed rice

    F: BBQ ribs w/ jalapeño-bacon corn on the cob & veg kabobs

    Sa: girls night out! Guys are making their own pizzas

    Su: crab legs w/ veg stuffed twice baked potatoes

    Tues: Pan fried pork chops, roasted balsamic carrots, cucumber & tomato salad
    Wed: Turkey & sweet potato picadillo tacos
    Thurs: Grilled cheese with tomato and avocado, homemade potato chips
    Fri: Out
    Sat: Vacation! Road trip from Fort Worth to Santa Fe, staying the night then headed to Colorado on Sunday 🙂

    Hi Jane. I’m obsessed with my Instant Pot. Do you have one yet? Fun toy.

    Sunday: Veggie Burgers, Roasted Carrots and Fruit
    Monday: Instant Pot Black Eyed Pea Curry on Basmati Rice, Strawberries and Whipped Cream, Garlic Bread 🙂
    Tuesday: Leftover Curry and Rice
    Wednesday:Chickpea-Powered Mediterranean Couscous with Zucchini and Heirloom Grape Tomatoes (Hello Fresh)
    Thursday: Sweet Potato Sunshine Salad with Crispy Chickpea, Avocado, and Citrus Dressing over Farro (Hello Fresh)
    Friday:Southwestern Tortellini Saladwith Black Beans, Corn, and Bell Pepper (Hello Fresh)

    Tue: Burgers & fries, fruit
    Wed: Grilled sausage and pepper hoagies, salad

    Sat – I’ll prob be dead on my feet and will beg to go out for Mexican
    Sun – taco salads

    Thursday: Basil Chicken and Green Beans

    Saturday: Skillet Chermoula Chicken and Peas
    Sunday: Steak Salad with Miso Vinaigrette

  10. Things are starting to go back to “normal” at our house.

    Sunday: Dinner with the neighbors…I brought shaved Brussels sprout salad and cornbread
    Monday: Mexican sweet potato casserole (Spiralized)
    Tuesday: Yorkshire pudding and cranberry sauce
    Wednesday: Shrimp kebobs and bulgur wheat caprese salad
    Thursday: Individual pizzas
    Friday – Saturday: Grandma’s in town!…out to eat

    Mon- Taco Salad
    Tues- Chicken Cordon Bleu with green beans
    Wed- Spaghetti w/butternut squash noodles
    Thurs- Chicken Quesadillas
    Fri- Make your own Flatbread Pizza w/ salad
    Sat- Chicken Sliders and veggies with hummus

    **I use a George Foreman Grill to make paninis! It works great since we don’t have a panini press or grilling pan.**
