Week 549 Menu…Cape Cod!

It’s Tuesday. I said I’d have the menu post up on Sunday. And that did not happen because I”ve been too busy with staring at views like this….

I am, apparently, in serious vacation mode. But my goal this week is to finally share my Viking Lite chocolate cake recipe with you, no matter how much sunset gazing is happening.

    Thurs – BBQ Chicken Salad
    Fri – Lasagna, Salad
    Sat – Taco Salad
    Sun – Roast Chicken & Potatoes

    Wed: Larb lettuce wraps & Asian slaw
    Thurs: TJ’s Lemon-Ricotta Ravioli with creamy tomato sauce & garden salad
    Fri-Sun: Headed to Boston for the first time…super excited!

    Sunday: General Tso’s cauliflower and rice (sauce)
    Monday: Sweet potato noodles with black beans and creamy avocado sauce
    Tuesday: Curried quinoa salad with chicken
    Wednesday: Dry rub ribs in the slow cooker (roasted sweet potato and kale salad for me)
    Thursday: Baked tilapia with garlicky green beans
    Friday: Leftovers
    Saturday: Out
