Week 564 Weekly Menu from Kalyn Denny of Kalyn’s Kitchen

Happy Monday! It’s the start of another week, which means it’s time for another menu. And it’s the start of a new year, which means a lot of us are making that annual attempt to eat a bit healthier. In that spirit I have a special guest menu for you today from Kalyn Denny of Kalyn’s Kitchen!

Kalyn and I talked about having her do a guest menu months ago but decided to wait until January to publish. Kalyn’s site is about carb-conscious eating and is a great resource for all kinds of special diets, including low-carb, South Beach, low-glycemic and more. We thought January would be the perfect time for her to share some dinner ideas! I met Kalyn nearly a decade ago. She was one of the first food bloggers I connected with in person as I began this journey and she’s been a wonderful support and friend ever since. Coincidentally I took a trip to her hometown last week and we even had the chance to meet for lunch. She’s one smart cookie and I am so happy she’s here on the blog today with a great dinner menu to inspire us!

– Low-Carb Chicken Stir-Fry Sheet Pan Meal

– Instant Pot Low-Carb Loaded Cauliflower Soup

– One-Pan Low-Carb Greek Skillet Chicken

– Asian Lettuce Cups with Spicy Ground Turkey Filling

– Easy Baked Pesto Chicken (with rice or cauliflower rice)

– Dinner Out

– Low-Carb Ground Beef Stroganoff Casserole with Cauliflower Rice

    – Chicken Caesar Wraps

    – Eat out night

    – Super Bowl! Probably 7-layer dip, chex mix, salad, snacks, etc! (Go Pats!)

    Tuesday: Greek Pita Chicken Meal with Olives and Greek Salad
    Wednesday: Pepperoni Chicken and Green Beans
    Thursday: Slash and Burn Fish from Michael Symon
    Friday: My oldest son’s birthday, Cheesy Chicken Broccoli and Rice Casserole and Zumbo’s V8 cake
    Saturday: PW’s Beef Enchilada Dip
    Sunday: Boys having a game day, Queso Dip, Guacamole, Jalapeno Poppers, Potato Skins and Peanut Butter Chocolate Chip Cookies

    Sat – mom’s night out! hb and kids had fish stix, fries, broccoli
    Sun – roast chicken, garlic parm potatoes, roasted thyme carrots
    Mon – lemon chicken orzo soup w/ crescent rolls
    Tues – chicken salad spinach wraps, fresh oranges
    Wed – homemade pizza, pepperoni, veggie
    Thurs – skillet ziti ricotta bake
    fri – breakfast dinner

    Mon: Out for Pho
    Tues: Out for Thai
    Wed: Sesame Ginger Ckn Stirfry, Rice, Asian Veggie Slaw (carry over from last week)
    Thurs: Bistro Chicken Salad with Roasted Garlic Dressing
    Fri: Family over for dinner: Hamburger and Chicken Slider Bar, Chips, Potato Salad
    Sat: Pork Tenderloin with Apple Chutney, Roasted Veggies
    Sun: Super Bowl Food – Husband in charge

    Sunday- grilled cheese sandwiches and broccoli cheddar soup ( per my grandson’s request)
    Monday- salmon, roasted Brussels sprouts, brown rice and salad
    Tuesday- stuffed peppers and salad
    Wednesday- skillet chicken parm and salad
    Thursday – leftovers
    Friday- Mexican take out
    Saturday- granddaughter’s 2nd birthday party!
    Sunday – steak sandwiches Go EAGLES!

    Monday: Spaghetti Squash Pizza Muffins (Delish recipe)

    Tuesday: Chicken Pot Pie (Ina Garten recipe)

    Wednesday: Beef Stroganoff (Gimme Some Oven recipe)

    Thursday: Leftovers

    Friday: Pizza kit from fundraiser

    Saturday: Out.
