Happy Monday! Sorry my menu is coming a little late in the day…I got distracted by the grocery shopping!

    Sunday- Steak sandwiches for the Super Bowl! Yay! Eagles!
    Monday- our usual- salmon, rice and roasted broccoli
    Tuesday- spatchcock chicken, potatoes and zucchini
    Wednesday- fend night – I have a meeting
    Thursday- shrimp and rice stir fry (Eagles Victory Parade!)
    Friday- out
    Saturday- clean out the fridge day

    We do our menu Tues-Mon. I now have some help in the kitchen with everyone taking a turn cooking so that makes menu planning even easier because they have to plan as well as cook on their night. 🙂

    Tuesday – Sesame chicken, steamed snow peas & carrots, and rice *16yr old daughter cooks*
    Wednesday – Take out on the way to church
    Thursday – Hamburgers, French fries, and broccoli salad *hubby cooks*
    Friday – Chicken Caesar wraps, chips, and fruit *17yr old son cooks*
    Saturday – Date Night
    Sunday – Chicken tortilla soup and cheese quesadillas
    Monday – Pesto chicken and spaghetti squash *14yr old son cooks*

    Mon – Basque potato and tuna soup
    Tues – Egg foo yung
    Wed – Leftovers
    Thurs – Leftovers
    Fri – Chinese tamales

    I was out of town, so here is my late and short meal plan 🙂

    Monday-Wednesday: Out Of Town
    Thursday: Oven Pizza and Fresh Fruit
    Friday: Chicken Piccata, Pasta, and Broccoli
    Saturday: Chicken Tikka Masala, Rice Pilaf, and Peas
    Sunday: Appetizers–Cheese Crostini, Queso and Chips, and Pigs in a Blanket and Fresh Fruit and Veggies
