Hi everyone!
For those who care about the whole clean eating thing that’s happening with me right now…I went to the doctor and it is definitely food that is causing the trouble. All test results came back super healthy, so I’m dealing with food allergies and sensitivities. So, all in all, good news…but maybe a bit annoying. 😉 I’m still eating crazy healthy and going to slowly experiment with different foods to see what kind of reaction I have (if any) to different things. Quite frankly, when I wrote last week’s post I was feeling so grumpy about what I couldn’t eat and quite bored with my options. Another week in and my mindset is completely different. Eating this way is definitely getting easier (I never in a million years thought I would breathe those words because bread and also food writer). Anyway, this really is a fascinating process and I’ll write more soon. Promise. Until then, let’s get down to business with planning out dinner this week, shall we?

Busy week for us and just got back from a weekend away (no meal prep) so needed super easy dinners this week

Mon — spaghetti w/ meat sauce
Tues — chicken salad pitas, baked fries
Wed — pizza
Thurs — BLTs, fries
Fri — breakfast dinner
Sunday- power off since Friday but that’s ok for tonight, Hollywood Awards party at our local independent theater!
Monday- power off is getting old and cold – house temp 45 when we got up! Luckily we got the power back later in the afternoon. – quick shopping trip to refill the freeezer and fridge. Salmon, fries and Brussel sprouts for dinner
Tuesday- chicken parm and spaghetti with salad
Wednesday- another winter storm coming in making chicken taco soup! Fingers crossed we don’t lose power again!
Thursday- grandson over for dinner ! Making waffles !
Friday – out
Saturday- making pizzas!
45 in the house?!?!?!? I am crossing all fingers, toes and my hair that you don’t lose power again!!

Costco prepared foods was my go-to this week. Working out well so far because the portions are so large it’s turning out to be less expensive than I thought. Keep us posted on the clean eating-

W- Costco clam chowder and salad, lunch: ham sandwich and apple slices
Th- pizza
F- Costco Meatloaf and Mashed potatoes
Sat- pulled pork, mashed potatoes and salad
those costco meals always surprise me…I see the price tag and think “that’s too much money” but then it is always more food than I think it will be!
Saturday – deli chicken fingers, roasted ranch potatoes, roasted green beans
Sunday – chicken fried rice, dumpling, and egg rolls
Monday – Cheese tortellini soup and grilled cheese
Tuesday – dressed frozen pizza and salad or fruit
Wednesday – leftovers or pick up something before church
Thursday – Sour cream and Parmesan noodles, roasted broccoli and carrots. I might make hamburger and veggie soup for myself so I don’t feel tempted to eat noodles.
Friday – eat out night.
