Week 576 Weekly Menu

Happy Sunday! We’ve got a busy week ahead of us, but the dinner plan should help with the stress! Here we go…

Weekly dinner meal plan #576 from This Week for Dinner

– Coconut Chicken Tenders (going to try experimenting with cornmeal instead of breadcrumbs)
– Salad


– Chicken, Veggie, Rice & Lentil Bowls (going to copy something I had at Cava in Orange County, will share a recipe if what I create turns out well!)

– Leftovers

– Pesto Pasta
– Salad

– Eat out night! (The girls and I will be in Los Angeles attending the first-ever Maverick Summit for girls as well as the Get Lit Words Ignite Classic Slam…I can’t wait for this inspiring day with my daughters!)

– No clue because we have back-to-back music recitals in different towns. Will pack snacks and hope we don’t starve!

    Sunday- pigs in a blanket (stuffed cabbage)
    Monday- salmon, mushroom risotto, asparagus and salad
    Tuesday- left over piggies
    Wednesday- beef stew
    Thursday – out at a dinner ( husband will fend)
    Friday – out
    Saturday- at another dinner. Husband will eat at my daughter’s home

    Sun: Returning from week of business travel- probably will eat in airport
    Mon: Grilled chicken strawberry & blueberry salad
    Tue: Shrimp empanadas, salad
    Wed: Rockfish with lemon & capers, broccoli
    Thu: Green Thai curry shrimp, rice
    Fri: Scrambled eggs and pancakes
    Sat: More green curry………maybe with Portobello mushrooms this time

    smoked sausage with cabbage and noodles
    Pizza crescents, lima beans
    Chicken Bacon Orzo soup
    Daughter cooks

    Mon: leftover corned beef (in the Instant Pot) and braised cabbage and latkes
    Tues:Thai stir-fried basil beef with sweet and sour cauliflower
    Wed: leftovers
    Thurs: leftovers
    Fri: Pasta
    Sat: Beef tenderloin (Pioneer Woman’s recipe…or is it Trisha Yearwood’s?)

    Tuesday: Cheesy Bruschetta Chicken and Salad
    Wednesday: BBQ Chicken Pizza and Corn
    Thursday: My baby turns 5!–Macaroni and Cheese and Broccoli and Rainbow Sprinkle Cookie Cake
    Friday: Sesame Crusted Pork Chops and Sweet and Salty Coconut Rice and Peas
    Saturday: Sausage Ricotta Pizza and Caesar Salad
    Sunday: Left Overs

    Sat – Tator Tot Casserole, Carrots
    Sun – Pasta Primavera w/Italian Sausage

    Tues: Husband cooks
    Wed: Loaded Bakers & Garden Salad
    Thurs: Out for bro-in-law’s bday dinner
    Fri: Sausage and Shroom Pizza & Salad
    Sat: Steakhouse Kabobs & Grilled Artichokes
    Sun: No clue!

    Mon: Hubby cooks: steak with balsamic and pesto on charcoal grill; roasted asparagus (YuM!), mashed potatoes from Festival
    Tues: bow-tie pasta, peas, bacon, Parmesan (adapted from Smitten Kitchen)
    Wed: late night- dinner out at Applebee’s
    Thurs: Hubby cooks- cheeseburgers
    Fri: corn chowder (smitten kitchen)
    Lunch: broccoli rubble (also smitten kitchen), sub sandwiches; grapes, cheese and crackers
