Week 619 Weekly Menu

Spring break is over and it’s back to the normal routine of life. Our oldest Cate went to visit her aunt in Singapore last week and came home with a stomach bug, as often happens after an international trip. I suppose the fates wanted her to get the full experience. So this week I’m trying to make lighter, vegetarian meals to soothe her belly back to normalcy.

Week 619 Weekly Dinner Menu: Caprese Salad, Sweet Potato & Black Bean Burritos, Lentil Rice Bowls, and Breakfast for Dinner

– Caprese Salad
– Baguette

Sweet Potato & Black Been Burritos or Rice Bowls

Lentil Rice Bowls with Lime Tahini Dressing

– Leftovers

– Potluck Party

– Eat out after cello recital

– Breakfast for Dinner: Waffles, Eggs & Fruit (Birch Benders Paleo Pancake & Waffle Mix for me, normal waffles for everyone else)

    Sun— vegan shepherds pie
    Mon — sweet potatoes, broccoli, chicken tenders
    Tues — veg fajitas, chicken fajitas, quinoa
    Wed — gnocchi w/ sun dried tomato pesto and spinach
    Thurs — tomato soup, grilled cheeses
    Fri — pizza, salad

    Tuesday: Sesame Pork Cutlets with Cabbage Slaw and Dinner Rolls
    Wednesday: Spicy Lamb with Lentils and Yogurt
    Thursday: Pan Seared Chicken with Warm Bulgur Pilaf
    Friday: My second son turns 11, he asked for Roast Beef Tenderloin Sandwiches with Arugula, Caramelized Onions and Horseradish Mayo and Coconut Cream Pie
    Saturday: Roasted Potato and Cauliflower Burritos
    Sunday: Chicken and Herb Lettuce Wraps with Crispy Shallots and Peanuts

    Tuesday: Broccoli and Provolone Quiche, carrots, salad

    Wednesday: Chicken in Plum Sauce, rice, salad

    Thursday: dinner w/ friends

    Friday: Lemon Turkey Burgers, oven fries, salad

    Saturday: Maine-Style Crab Rolls, pickle spears, chips

    Sunday: Chicken Spaghetti, green beans, salad, Cookies and Cream Chocolate Cake

    Breakfast: Strawberry Bread, Breakfast Burritos
