Well, as predicted, I totally did not use my menu last week! We had school events every single night and I never had time to cook or even go grocery shopping. So, I’m just copying and pasting last week’s menu. I don’t know if I’ve ever actually done this, so you’re witnessing a first! π

Posting today’s menu is making me laugh…man, it was easy just copying last week! My grocery list is even already done. Haha! Sorry I don’t have much new inspiration for you for the week, but at least we can pull ideas from each other. Be sure to share your menu in the comments below!

Tues: Chicken & Kale Enchiladas
Wed: White beans with spinach and sausage skillet
Thurs: Curried Chicken salad over spinach
Fri: Honey Sriracha Salmon + salad
Sun: Scallops, corn on the cob, salad
Mon & Tue: Business Travel
Wed: Fish tacos
Thu: Greek chicken, green beans
Fri: California salad with hard boiled eggs
Sat: Grill something with my family to celebrate Fatherβs Day weekend
I work in the afternoon and evening now so we tend to either eat separately or eat take out. I used to love to cook but now I’m exhausted and can’t stand it. I’m trying to do more home eating because going out is EXPENSIVE and that means cutting corners like buying from Schwans and buying precut potatoes and other veggies. Two years ago I tried Home Chef and that worked for awhile, but then they started to go bad in the fridge. Now my grocery store sells 5 different meals a week, I think, so I bought two because they were buy one get one half off. I also buy cheap TV dinners for my husband’s lunches and lots of fruit and veggies to pack in my lunch with hummus. I never schedule meals for a particular night, I just choose what sounds good.

[ ] Breakfast for Dinner – eggs, toast, potatoes, fruit
it’s funny, I do look at the calendar and assign particular meals to certain days…but I still don’t always follow the actual days. it’s really good to stay flexible, I like it that way…especially wen you’re so busy! Glad you are figuring out how to do dinner even with the crazy schedule, and thank you for sharing! yay!

Tuna melts, roasted asparagus, peas
Spaghetti and meatballs, green beans, applesauce
Breakfast (sausage or bacon, scrambled eggs, pancakes, strawberries and bananas)
Hubby cooks 2 days (he’s retired)
Monday:Grilled chicken, Savory Noodle Kugel, salad
Tuesday: Loaded Macaroni and Cheese, green beans, salad
Wednesday: Baked Fish w/ Ratatouille, corn, salad
Thursday: leftovers
Friday: out to eat
Saturday: Crock Pot Lemon Herb Roasted Chicken, carrots, mashed potatoes, salad
Sunday: Junkyard Joes, chips, pickle spears, watermelon
Breakfast: Chocolate Challah French Toast, Cheese Omelet
