Happy Holidays! We are celebrating Christmas this week and I’m getting ready to cook a few of our traditional recipes. Can’t wait to see all your meal plans for the week, too!
MONDAY:
– Homemade Honey Goat Cheese Pizza
TUESDAY:
– Chinese Food Takeout (Maynard Family Christmas Eve Tradition)
WEDNESDAY:
– Swedish Meatballs with boiled red potatoes and lingonberry jam (Wallin Family Christmas Eve Tradition, but on Christmas Day!): I will be using GF panko bread crumbs for a small batch for myself…last year I used GF breadcrumbs and the meatballs were definitely not as good as the original made with real bread crumbs, so I’m going to try a different brand for this year’s GF batch. Hoping they will be better than last year, crossing fingers!
– Swedish Cardamom Bread (both in bun form and braided loaves…I’m also going to try to create a Gluten Free version of the buns, wish me luck!)

Friday: Buffalo Chicken Burgers and Salad
Saturday: Meatball Subs and Broccoli
Sunday: Chicken Thighs Adobo and Green Beans

Sun: Chicken Parmesan meatballs, garlic bread, salad
Mon: Grilled lemon garlic chicken, mixed veggies
Tue: Halibut, carrots, salad
Wed: Traditional Christmas dinner with turkey, ham, and all the traditional sides at my parent’s house with my family. I have been assigned cranberry salad, dinner rolls, and wine.
Thu: Leftovers
Fri: Holiday party
Sat: Tomato soup with mini pierogies
Happy holidays! Now that you’ve mentioned meatballs, I can’t stop thinking about them. Hahaha. I’m sure I’ll probably make them soon. We travel to visit family for the holidays, so I luckily don’t have to plan too much this week!
Monday: chicken and broccoli
Tuesday: our family tradition of cheese, summer sausage, and crackers on a blanket in front of the fireplace. We are adding in hummus and carrots this year too.
Wednesday-Thursday: traveling
Friday: we will be driving home so we will probably eat out.
Saturday and Sunday: this may be meatball day! And probably pizza.
