Week 657 Weekly Menu

Happy New Year! Might I suggest meal planning as an awesome resolution, including posting your meal plan here every week to keep yourself accountable? Sounds like a great idea to me! 😉 Here’s my menu for the week. Comment section below is begging for you to share yours, too!

Week 657 Weekly Dinner Menu: Monday - Chicken Gumbo; Tuesday - Blackened Fish; Wednesday - Tacos; Thursday - Leftovers; Friday - Sausage Hoagies; Saturday - Eat out; Sunday - Grill Night

Chicken Gumbo with Tasso and Andouille Sausage

– Blackened Fish (whatever’s on sale and looks good at the butcher counter)
– Long Grain & Wild Rice and Salad

Cora’s Mexican Ground Turkey Tacos

– Leftovers

Sausage, Peppers & Onions Sandwiches

– Eat out night

– Grill Night with Salad

    Sun: Cilantro sour cream enchiladas made with salsa verde homemade by my cousin
    Mon: Detox soup
    Tue: Salmon, green beans
    Wed: Halibut, mixed veggies
    Thu: Grilled lemon pepper chicken, baked potato, salad
    Fri: Kale pesto pizza
    Sat: Cauliflower soup

    1/5 to 1/11:
    Stuffed Italian shells
    Garlic lemon cod with asparagus and couscous
    Eggs and sausage and potatoes
    Moroccan black beans and rice

    We still have a few leftovers to get through from this last week – roast pork and veggies, and penne vodka – so I’m only doing a few meals this week and a couple of them are easy pantry sweeps that I can either get to or not as needed.

    Monday: Vegetarian Steakhouse Dinner–Twice Baked Potatoes, Broccoli, Wedge Salad and Stuffed Mushrooms

    Tuesday: Chicken Gyros with Feta Fries and Arugula Salad

    Wednesday: Sauteed Steak a la Mexicana and Refried Beans and Fresh Vegetables

    Thursday: Pulled Pork Sandwiches, Apple Cabbage Slaw, Baked Beans and Orange Avocado Salad

    Friday: Grilled Bayou Burgers with Spicy Mayo and Brussels Sprouts Slaw

    Saturday: Pork Verde Enchiladas and Corn

    Sunday: Braised Pork Tamale Bowls
