Week 662 Weekly Menu

Hello everyone! So far, so good with full-time work and the weekly menu…the meal plan helps so much! Hitting the grocery store over the weekend before the work week starts is key. Here’s what’s going on in the kitchen this week!

Week 662 Weekly Dinner Menu: Monday - Chicken Piccata; Tuesday - Fried Rice; Wednesday - Nachos; Thursday - Leftovers; Friday - Eat out; Saturday - Asian Chicken Salad; Sunday - Grill Night

Chicken Piccata
Mashed Potatoes and Salad

Fried Rice

– Nachos
Seven-Layer Dip

– Leftovers

– Eat out night

Pat’s Asian Chicken Salad

– Grill Night (whatever looks good and is on sale at the butcher!)
– Salad and Roasted Potatoes

    I did nachos and seven-layer dip for a big sleepover last night! Canโ€™t go wrong!

    Sunday: Salmon and herbs (Valerie Bertinelli recipe) and asparagus
    Monday: Lettuce cups (shredded chicken, cheese, black beans, scallions)
    Tuesday: Burgers on the grill and sweet potato fries
    Wednesday: Quick mac and cheese casserole and fiesta corn
    Thursday: Fully loaded twice-baked potatoes – cheddar & bacon (ATK recipe)
    Friday: Chana masala
    Saturday: Out

    Tues – Tacos
    Weds – Take out
    Thurs – Meatloaf with mashed potatoes and some green veggie

    Tuesday: Garlicky shrimp dip and Pizza Dip with Fresh Bread and Salad

    Wednesday: Pulled Pork Mexican Street Corn Nachos with Fresh Salsa and Guacamole

    Thursday: Feta Corn Pasta with Sausage for my Husband and Broccoli

    Friday: Ranch Roasted Chicken and Root Vegetables with Creamy Cheesy Spinach Rice

    Saturday: Oklahoma Fried Onion Burgers and Fresh Vegetables

    Sunday: Pineapple Salsa Pork Chops and Parmesan Garlic Carrot Fries

    Tues– leftovers or take out (either/or with Thurs)

    Weds– Thai basil beef with coconut rice

    Thurs– leftovers or take out (either/or with Tues)

    Fri– Z’s birthday dinner: homemade meatballs, spaghetti, ceasar salad, garlic bread, cake!

    Sat- TBD

    Wednesday – vegetarian stuffed peppers and salad
    Thursday- take out pizza with our daughter to celebrate her birthday

    Friday – out at political event
    Saturday – Iโ€™m out with my daughter and son – my husband is planning on a hoagie
