Week 663 Weekly Menu

Hello! I just want to take a minute and say THANK YOU for sharing menus every week! They are always so helpful and this week inspired every dinner I am planning to make this week. 

Week 663 Weekly Menu: Asian Chicken Salad; Tuesday - Teriyaki Chicken Bowls; Wednesday - Naan Pizzas; Thursday - Enchiladas; Friday - Leftovers; Saturday - Eat out; Sunday - Grill Night

– Pat’s Asian Chicken Salad

Teriyaki Chicken Bowls (good idea, Tracey!)

Naan Pizzas (in toaster oven instead of on the grill)

– Green Chile Enchiladas (my kids love this sauce by HATCH Chile Company

– Leftovers

– Eat out

– Grill night (whatever looks good at the butcher)
– Salad

  1. I’m glad the transition to working full-time isn’t too stressful??? Good thing you’re already so disciplined with menu planning. My menu is proof that America’s Test Kitchen is my go-to o sports ion lately!

    Sunday: Skillet roast chicken and potatoes (America’s Test Kitchen)
    Monday: Chana masala and asparagus
    Tuesday: Shredded pork tacos (in Instant Pot) in lettuce cups with fixins’
    Wednesday: Quick bakes mac and cheese casserole (ATK recipe) with fiesta corn
    Thursday: Honey garlic pork chops and parmesan cauliflower (ATK recipe)
    Friday: Leftovers
    Saturday: Out

    Mon: Bean thread salad with shrimp
    Tues: Fish fillets and snow peas and rice
    Wed: leftovers
    Thurs: Chinese tamales
    Fri: Grilled salmon, mac & cheese
    Sat: eat out

      It’s a major production that we only do once a year. Rice and meat and mushrooms and Chinese sausage are wrapped in bamboo leaves and boiled for 6 or so hours. They freeze well to last through the year.

    Wed-Fri: Business Travel
    Sat: Scrambled eggs, chicken sausage, fruit

    Wednesday: BLT with Guacamole and Chips and Salad

    Friday: Mediterranean Turkey Burgers with Zucchini Salad and Ricotta

    Saturday: Cheesy Chicken Broccoli Bake and Tahini Roasted Carrots

    Sunday: Chicken Fried Steak Fingers, Onion Biscuits and Salad
