Week 666 Weekly Menu

Well, this has been a quite a week, hasn’t it? I look back on this past Tuesday and can’t believe how different things were: my conversations, our family’s plans plans for the upcoming weeks, I had my choice of parking spots at Costco. Fast forward two days: conversations changed dramatically, everything for the next 3-4 weeks is cancelled, there is a traffic jam just to get into the Costco parking lot. I have to say I’m grateful to be married to a person who studied viruses and can explain everything so clearly. And our family is 100% happy to do our part to flatten the curve. We are not panicked, and we are grateful for all the scientists and healthcare workers working tirelessly to guide and care for all the humans on this beautiful planet.

I’m still planning my menu. I’m hitting Frazier Farms right when it opens, hoping there is food on the shelves. If not, we’ll go back in a few days. From here on out it’s all about breathing, kindness and going with the flow!

Week 666 Weekly Menu: Monday - Spaghetti; Tuesday - Quesadillas; Wednesday - Pot Roast; Thursday - Leftovers; Friday - Salmon; Saturday - Eat out, support local!; Sunday - Grill Night

Also, um, kinda funny(?) the weekly menu number for this week is 666. Calm down, weekly menu. 😉

Spaghetti and Meatballs

Kitchen Sink Quesadillas

Slow Cooker Pot Roast
– Mashed potatoes and salad

– Leftovers

Zesty Salmon
– Roasted Potatoes and Side Veg

– Take out (supporting a local restaurant!)

– Grill night
– Salad

    This week”s menu # is unnerving! Ugh. Still gotta eat though, so here is my menu:

    Sun: Grilled lemon garlic chicken, black beans with lime
    Mon: Seared scallops, mixed veggies
    Tue: Baked pasta dish (will use up veggies/cheeses/herbs in the fridge for this “kitchen sink” dinner), salad
    Wed-Left overs
    Thu: Meatloaf, baked potatoes, carrots
    Fri: Tuna melts, fruit
    Sat: Baked cod with lemon, peas

    Sun: cabbage roll casserole (thinking twice about making actual rolls)
    Mon: chicken pitas with tzatziki
    Tues: leftovers
    Wed: take out (supporting a local restaurant, too)
    Thurs: grilled salmon with whatever is in the CSA box (one of the vendors from the farmers market is making a special offer of boxes now that the county has closed all markets)
    Fri: leftovers
    Sat: dumpling soup

    Stay inside, everyone! Be well!

    Sunday: Packaged chicken tagine with chickpeas, rice, and root vegetables
    Monday: Eggs and potatoes
    Tuesday: Corned beef and cabbage, soda bread
    Wednesday: Pork and vegetable baked tacos
    Thursday: Andouille sausage and Spanish rice
    Friday: Chicken nuggets and French fries
    Saturday: Chicken noodle soup and garlic breadsticks

    Monday: Margarita Pizza and Arugula Salad

    Tuesday: Roasted Corn Beef with Horseradish Cream and Carrots and Cheddar Soda Bread

    Wednesday: Chicken with Sun Dried Tomato Cream Sauce and Pasta and Roasted Asparagus

    Thursday: Baked Fish with Braised Cabbage

    Friday: Scallopine di Pollo and Steamed Broccoli

    Saturday: Cheeseburgers with Fries

    Sunday: Out To Eat

    Mon– leftovers

    Tues– Corned beef, cabbage, potatoes, carrots, soda bread

    Weds– Skinny slow cooker General Tzo’s chicken, rice, stir fried veg

    Thurs– take out–support local favorites

    Fri– leftovers

    Sat– Kids cook?

    Sat – Leftovers
    Sun – Rigatoni & Marinara, Salad, Breadsticks
