Monday: Pasta with Sundried Tomato Pesto and Fresh Mozzarella and Fresh Vegetables
Tuesday: Salmon with Avocado Tomatillo Salsa, Black Beans, Corn and Rice
Wednesday: BBQ Chicken Cobb Salad with Avocado Ranch
Thursday: Pulled Pork Sandwiches with Homemade Pickles and Slaw
Friday: Cheeseburgers with Tater Tots and Fresh Veggies
Saturday: Bow Tie Chicken Pasta and Broccoli
Sunday: Grilled Peanut Chicken with Broccolini (PW)
I have the next 2 weeks of menu. Trying to stay out ahead 14 days at a time. I’m using local farmer’s markets (they are delivering during this crisis) as well as what is available at my grocery store:
Sun: Black bean, sweet potato, & goat cheese empanadas, green dipping sauce
Mon: Shrimp scampi, salad
Tue: Scrambled eggs, sausage, toast
Wed: Baked lemon cod, green beans
Thu: Baked chicken, baked potatoes, peas
Fri: Halibut, carrots, salad
Sat: Spaghetti, salad
Sun: Black bean mushroom burgers, chips
Mon: Seafood stew with orange & fennel, crusty bread
Tue: Apricot chicken, baked potatoes, green beans
Wed: Garlicy shrimp over couscous, salad
Thu: Fritatta, roasted potatoes
Fri: Lasagna, salad
Sat: Leftovers
We got a box of CSA delivered from JR Organics, not knowing ahead of time what was inside. But it’s presented a whole bunch of ideas.
Sun: spaghetti and meatballs; kale and apple salad
Mon: Tuscan-style grilled ribs, potato salad
Tues: chicken and bell pepper pasta salad
Wed: leftovers
Thurs: leftovers
Fri: leftovers
Sat: Lebanese lamb and green beans with chickpeas
JR is one of the farmstands I ALWAYS hit at the farmer’s market, may have to go sign up for their CSA! glad you mentioned it!
Yasukochi Family Farms is the other CSA, but they sell out quickly!
Sun: Steak, baked potatoes, grilled vegies, salad
Mon: Sloppy Joes, potato planks
Tues: Chicken enchiladas
Wed: Kielbasa, cabbage, fried poatoes
Thurs: Pork fried rice, egg rolls, fried wontons (from freezer)
Fri: Shrimp Scampi, pasta, salad, asparagus
Sat: Roasted turkey, butternut squash, mashed potatoes, etc
Sun: Turkey leftovers
We’re trying to keep it interesting here. I’m in much better shape during quarantine than my friends because I have over 500 menus to pull from!…..plus everyone else’s menus! 🙂
Sunday: Takeout!
Monday: Ginger fried rice with mixed vegetables
Tuesday: Chicken noodle soup, baguette, and asparagus
Wednesday: Pad Thai with miso soup and sautéed kale
Thursday: Pork chops with applesauce and potatoes wedges
Friday: Taco bake with nachos and fiesta corn
Saturday: Pasta and meatballs

Monday- trying to stay ‘normal’. Salmon, French fries, Brussels sprouts and salad
Tuesday – black bean soup and salad
Wednesday- chorizo empanadas and fries ( tortillas and salsa as a starter!)
Thursday- leftover black bean soup and leftover empanadas
Friday – virtual rehearsal dinner for my son. This weekend was to be a big family wedding! But sadly, it has been canceled. They will still marry on Saturday, but just themselves and a witness. The rest of us will be there digitally! So we will all eat Italian food tonight and be together through zoom!
Saturday – the wedding will be at 12:30. So we will have a brunch as we watch the ceremony, bacon and cheese quiche with sour dough cinnamon buns! We will get dressed up in our wedding attire!
So sorry the COVID-19 crisis affected your son’s wedding! But, way to roll by making it digital and even dressing for the occasion. It will be a story they tell forever!
