Week 669 Weekly Menu

Hey there, friends. Thank you once again for posting menus week after week. They truly are so helpful. And we get little glimpses into your quarantine lives, including Nancy celebrating her son’s wedding from afar with such a positive attitude (click here and read comment #7). 

Week 669 Weekly Menu: Monday - Leftovers; Tuesday - Island Pork; Wednesday: Pesto Pasta; Thursday - Stuffed Peppers; Friday - BLTs; Saturday - Takeout local!; Sunday - Grill Night

MONDAY:
– Leftovers (we have so many from last week!)

TUESDAY:
Island Pork with Sticky Coconut Rice

WEDNESDAY:
– Pesto Pasta

THURSDAY:
Stuffed Peppers

FRIDAY:
– BLTs

SATURDAY:
– Takeout night (support local!)

SUNDAY:
– Grill night with salad

    Sun: Corned beef with roasted cabbage and duck fat roasted potatoes
    Mon: Chicken Fricot
    Tues: Chinese Red Chicken with sautéed snap peas
    Wed: leftovers
    Thurs: Gnocchi with pesto and green salad
    Fri: leftovers
    Sat: take-out Mexican food

    Monday: Red Dal with Rice Pilaf and Peas

    Tuesday: Thai Basil Beef with Coconut Rice (Jane’s recipe :))

    Wednesday: Taco Bell Copycat Crunchwrap Supreme and Fresh Salsa

    Thursday: Chicken and Quinoa Burrito Bowls with Salsa Verde

    Friday: Steak au Poivre, Brussels Sprouts and Roasted Potatos

    Saturday: Son’s 12th Birthday–Waffles for Breakfast, Indian Take-out lunch, Sausage White Pizza Dinner and Jam Donuts for his birtday dessert 🙂

    Sunday: Ham, Rosted Potatoes, Salad and Rolls

    Oh my gosh! Thanks for the good wishes for the wedding! It wasn’t what was planned but beautiful none the less! We were altogether with zoom on Friday night for the rehearsal dinner then all got dressed up in our wedding finery for the ceremony on Saturday afternoon! Not a dry eye on the internet! We all went to our breakout rooms/tables and the bride and groom visited each!
    Looking forward to celebrating in person when this is all over! Note- I have another son who is to marry in June – say prayers send up good thoughts that we will all get to be together then!
    Sunday- burgers on the grill
    Monday – our usual- salmon, rice and roasted Brussels sprouts
    Tuesday- leftovers from the rehearsal dinner – homemade pasta and sauce with garlic bread
    Wednesday- chicken korma with rice and naan
    Thursday – beef stew
    Friday – pizza (from the freezer)
    Saturday- leftovers
    Sunday – lamb roast, scalloped potatoes and broccoli

    Congratulations on your son’s wedding Nancy!! Got a new kitchen gadget which has been fun to play with. Did turkey meatloaf last night and it carmelized the bbq/ketchup sauce that was on top- just using the bake function at 325 for 50 mins. Amazing.

    M- Cheerios
    T- sausages
    W- steaks
    Th- turkey spinach meatloaf in the new cuisineart air fryer toaster TOA-65 with baked potatoes
    Fr- pizza with spinach and Monterrey jack cheese
    Sat- chicken nuggets
    Sun- beans and cheese or order out!
