Week 672 Weekly Menu

You guys. I sat down to do my menu THREE HOURS AGO. I decided to write a quick post about my new favorite pectin and ended up going down a very deep freezer jam rabbit hole, writing the new post and updating old ones. My back kind of hurts and now I have to do my grocery shopping tonight instead of this morning, but it was worth it. Click here for my new freezer jam post, that turned out to be a true labor of love! And now finally on to my meal plan for the week!

Week 672 Weekly Dinner Plan: Monday - Enchiladas; Tuesday - Homemade Pizza; Wednesday - Salmon; Thursday - Cheeseburgers; Friday - Local Takeout; Saturday - Grill Night; Sunday - Buffalo Wings

Please note that my consistent weekly meal planning is not a sign of bliss…I am 100% sick of my kitchen, but am trying to maintain that sometimes elusive “attitude of gratitude” to get me through the meal-planning-and-cooking quarantine grind. It’s mostly working. 😉


– Enchiladas

Buffalo Wings
– Salad and Fries (gonna pick up in the freezer section!)

    I’m to the point of just making a big batch of meals all at once and seeing how long they last. Decision fatigue is less and cleanup is consolidated. We’ll see how these week goes….

    On tap:

    Southwestern pot pie
    Tuna pasta salad
    Taco pasta salad

    (It’s getting hot where I live, so we’re attempting to adapt menus accordingly.)

    Sun– soup dumplings, Chinese bbq pork, veg fried rice,

    Mon– Rice and beans with ham bone, roasted broccoli


    Weds– french onion soup, sausage, roasted carrots

    Thurs– baked pasta, zucchini

    Fri– take out–support local favorites

    Sat– tbd or leftovers

    Sun– kids cook, tbd

    We’ve been sticking to our menu pretty well…..just switching the order of meals around here and there when needed. Planning for 14 days provides additional flexibility.

    Sun: Sour cream chicken & black bean enchiladas
    Mon: Meatloaf, baked potatoes, peas
    Tue: Shrimp & veggie stir fry, brown rice
    Wed: Breakfast empanadas, fruit
    Thu: Pan seared rock fish, coleslaw, roasted potatoes
    Fri: Baby kale salad with grilled chicken, goat cheese, & walnuts
    Sat: Homemade pizza, salad

    Sun: Stuffed peppers, salad
    Mon: Pasta with red sauce, salad, garlic bread
    Tue: Mexican shrimp skillet
    Wed: Salmon, veggies
    Thu: Baked chicken, sweet potatoes, peas
    Fri; Black bean, mushroom, & flax seed burgers, chips
    Sat: Grilled chicken entree salad

    Monday: Queso Fundido with Chips, Guacamole and Fresh Vegetables

    Tuesday: Roast Chicken with Roast Vegetables and Peas

    Wednesday: Stove Top Pork Chops and Garlicky Broccoli

    Thursday: Honey Sriracha Chicken Wings (if I can find wings at the store) and Blue Cheese Bacon Wedge Salad

    Friday: Salmon Burgers with Asparagus and Lemon-Herb Sauce

    Saturday: Cuban Crepes with Pickles and Salad

    Sunday: Chicken Alfredo and Broccoli

    Sunday – leftover buffalo chicken calzone
    Monday – mushroom, shrimp & Scallop risotto
    Tuesday – London broil on the grill ( hope fit will be a nice day!) zucchini and fries
    Wednesday- leftovers
    Thursday – Ordering take out
    Friday-groceries getting delivered so we’ll see what shows up!
    Saturday – chili with leftover beef

    I hope everyone is doing well. Here’s what I’m planning to cook this week:

    Sheet pan nachos (black beans & cheese), with all the toppings, Spanish rice, chips & salsa
    Similar to this recipe:

    Tikel Gomen (Ethiopian cabbage & potato dish), black eyed peas, roasted okra (still on the menu from a couple of weeks ago, hopefully it will happen this week)

    Brazilian chickpeas & rice, salad

    Sauteed kale & chickpeas, roasted veggies (butternut squash, brussel sprouts, potatoes)

    Pasta dish – smoked sausage, green beans, tomatoes, egg noodles with salad and garlic bread

    Mon – Spaghetti Bolognese, Salad
    Tues – Take Out
    Wed – Grilled Salmon, Rice, Salad
    Thurs – Sheet Pan Honey Garlic Chicken, Red Potatoes and Broccoli
    Fri – Chicken Enchiladas
    Sat – BBQ Grilled Chicken, Corn on the Cob, Salad
    Sun – Creamy Ranch Chicken & Veggies (Crock Pot)
