You guys. I sat down to do my menu THREE HOURS AGO. I decided to write a quick post about my new favorite pectin and ended up going down a very deep freezer jam rabbit hole, writing the new post and updating old ones. My back kind of hurts and now I have to do my grocery shopping tonight instead of this morning, but it was worth it. Please note that my consistent weekly meal planning is not a sign of bliss…I am 100% sick of my kitchen, but am trying to maintain that sometimes elusive “attitude of gratitude” to get me through the meal-planning-and-cooking quarantine grind. It’s mostly working. 😉

I’m to the point of just making a big batch of meals all at once and seeing how long they last. Decision fatigue is less and cleanup is consolidated. We’ll see how these week goes….

Tues–leftovers
Weds– french onion soup, sausage, roasted carrots
Thurs– baked pasta, zucchini
Fri– take out–support local favorites
Sat– tbd or leftovers
Sun– kids cook, tbd
We’ve been sticking to our menu pretty well…..just switching the order of meals around here and there when needed. Planning for 14 days provides additional flexibility.
Sun: Sour cream chicken & black bean enchiladas
Mon: Meatloaf, baked potatoes, peas
Tue: Shrimp & veggie stir fry, brown rice
Wed: Breakfast empanadas, fruit
Thu: Pan seared rock fish, coleslaw, roasted potatoes
Fri: Baby kale salad with grilled chicken, goat cheese, & walnuts
Sat: Homemade pizza, salad
Sun: Stuffed peppers, salad
Mon: Pasta with red sauce, salad, garlic bread
Tue: Mexican shrimp skillet
Wed: Salmon, veggies
Thu: Baked chicken, sweet potatoes, peas
Fri; Black bean, mushroom, & flax seed burgers, chips
Sat: Grilled chicken entree salad
Monday: Queso Fundido with Chips, Guacamole and Fresh Vegetables

Sunday – leftover buffalo chicken calzone
Monday – mushroom, shrimp & Scallop risotto
Tuesday – London broil on the grill ( hope fit will be a nice day!) zucchini and fries

Thursday – Ordering take out
Friday-groceries getting delivered so we’ll see what shows up!
Saturday – chili with leftover beef
