Week 673 Weekly Menu

I everyone! I’m having some technical difficulties, so I can’t create the image of this week’s menu right now. But I still want to get the menu plan published and out the door so you can all share yours. So, how about a photo of one of the recipes I’ll be cooking instead!

    Monday: Cheesy Stuffed Poblanos with Fresh Salsa and Chips

    Tuesday: Seven Layer Dip, Tres Leches Cake and Margaritas–Happy Cinco de Mayo!

    Wednesday: Slow Cooker Carnitas Burritos and Corn on the Cob

    Thursday: Bean and Ham Soup with Homemade Ciabatta and Salad

    Friday: Chicken Parmesan Burgers and Fresh Vegetables

    Saturday: Baked Beef and Bean Burritos with Guacamole and Fresh Salsa

    Sunday: Mother’s Day–take out and chocolate cake 🙂

  3. I’m going with the menu planning format I did last week, as it seemed to work: pick a few dishes and then fill in the gaps. We’re going with a (mostly) Mexican theme for Cinco de Mayo:

    Barley and vegetable risotto
    Taco stuffed sweet potatoes
    Black bean burrito bowls

    Week 8 of isolation. i found out that we only have to recycle menus after 5 weeks. Everyone will eat it and there are never any leftovers. That ain’t bad at all!

    Sunday: Chana Masala and roasted cauliflower
    Monday: Fully-loaded Twice Baked Potatoes (ATK recipe) and roasted asparagus
    Tuesday: Taco Bake and nachos
    Wednesday: Pad Thai, miso soup, and sautéed kale
    Thursday: Pasta with meatballs and roasted broccoli
    Friday: Homemade pizzas and fiesta corn
    Saturday: Local Takeout (same place 4 weeks in a row!…don’t mess with a good thing!!)

    Mon – Honey Balsamic Chicken Thighs, Rice, Broccoli
    Tues – Take out from our favorite local Mexican restaurant
    Wed – Cheesy Ziti Bake, Salad
    Thurs – Chili, Salad, Corn Muffins
    Fri – BBQ Meatballs, Mashed Potatoes, Salad
    Sat – Take out
    Sun – ??????

    Chicken tenders with roasted veggies and homemade gnocchi

    Sun: Shrimp & grits: splurged a little and got a shipment of ground corn from a mill in South Carolina that’s been grinding since 1820. Served with roasted cauliflower from our CSA box.

    Mon: Chinese tamales from the freezer (trying to clear out some room); tossed green salad

    Tues: Beef kabobs in pita and tzatziki and onions sautéed with zaatar

    Wed: Bacon and green bean stir fry

    Thurs: Sweet and sour chicken with rice

    Fri: leftovers

    Sat: takeout
