Week 675 Weekly Dinner Menu: Monday - Rachel Sandwiches, Tuesday - Tacos; Wednesday - Stir Fry; Thursday - Lasagna Baked Ziti; Friday - Leftovers; Saturday - Local Takeout; Sunday - Grill Night

    Mon: Shrimp Caesar salad
    Tue: Maple mustard chicken with potatoes, salad
    Wed: Sloppy Joe’s, sliced cucumbers & golden cherry tomatoes
    Thu: Veggie Frittata
    Fri: Homemade pizza & salad
    Sat: Chicken on pitas with tzatziki sauce & grilled veggies

    Thurs– Chinese bbq pork, fried rice, stir fried veg

    Fri– veggie burgers, roasted potatoes, fruit salad

    Sat– tbd

    Sun– kids cook, tbd

    I got a bunch of eggs that I want to use. Now I am thinking about making baked Ziti!
    Fri- Rancheros- eggs over medium with black beans, fajita tortillas, dollop of nonfat yogurt and salsa
    Sat- lunch: lentils with a little garlic, dinner: fajita tortillas with lentils, nonfat yogurt and salsa
    Sun- lunch: lentil tacos, dinner: hamburgers
    Mon- omlettes
    T- plain pasta with egg and hard cheese
    W- pasta leftovers
    Th- eat takeout

    Sun: Pork and squash tinga tacos (I have to admit we’re still trying to eat up all of the street taco-sized corn tortillas I bought a few weeks ago at the local bodega.)
    Mon: fried tofu and green bean stir fry
    Tues: green salad with smoked salmon (from Pt. Loma Seafood); sweet potato & corn grits spoonbread
    Wed: leftovers
    Thurs: leftovers
    Fri: baked chicken, steamed artichokes, corn & jalepeno cakes
    Sat: leftovers

    We just got our internet back after two days, so here’s my belated menu for the week 🙂

    Monday: Take Out

    Tuesday: Chicken Picatta with Garlicky Broccoli

    Wednesday: Turkey Meatloaf with Mashed Cauliflower and Salad

    Thursday: Chicken Enchilada Bake with Fresh Salsa and Guacamole

    Friday: Fish Tacos with Slaw

    Saturday: Chorizo Breakfast Burritos with Fresh Vegetables

    Sunday: Sloppy Joes and Corn on the Cob

    Sunday- take out pizza from Pizzaria Beddia ! Celebrating son’s graduation form law school!
    Monday- watched virtual graduation with son and his new wife socially distant on our porch and then grilled hamburgers and veggies to celebrate!
    Tuesday- salmon with rice and Brussels sprouts
    Wednesday- salad with grilled chicken and homemade sour dough rolls
    Thursday- Maultaschen (German ravioli) with peppers, onion and zucchini
    Friday- TBD
    Saturday – Pizza while zooming other son and his bride at their rehearsal dinner!
    Sunday – take out lobster bake to celebrate son’s wedding (two zoom weddings and a law school graduation!)
