Week 679 Weekly Menu

Whoah. I made everything on last week’s menu! Except the ribs…I forgot to defrost them again! Anyway, not much carry-over, so I have to come up with new ideas for this week. Thank goodness you all share menus every week to provide us all with inspiration!

Week 679 Weekly Dinner Menu: Monday - Tomato Soup; Tuesday - Chicken Gumbo; Wednesday - Honey Goat Cheese Pizza; Thursday - Leftovers; Friday - Pesto Chicken Salad Sandwiches; Saturday - Takeout; Sunday - RibsMONDAY:

    Monday – Lettuce wraps made with ground turkey
    Tuesday – King Ranch Chicken (found a roast chicken on sale)
    Wednesday – Tortilla Soup (second use of chicken)
    Thursday – Greek burgers (using the rest of the ground turkey)
    Friday – Fish Tacos
    Saturday – Lentil Soup
    Sunday – Naan Pizza (We make some naan bread, put out sauce and toppings such as pepperoni, salami, fresh mozzarella cheese balls, parmesan cheese, feta cheese, basil, arugula and what ever else we can find in the fridge. Next everyone assembles their own pizza and we put them under the broiler to melt the cheese and enjoy.)

    Sunday – steak and asparagus on the grill French fries in the air fryer
    Monday – salmon, zucchini and rice
    Tuesday- lasagna
    Wednesday – Thai chicken with rice
    Thursday – leftovers
    Friday – pizza
    Saturday- burgers on the grill , hopefully corn!

    Sun: lasagna, roasted asparagus
    Mon: paella
    Tues: udon noodles
    Wed: leftovers, steamed artichokes
    Thurs:leftovers
    Fri:green bok choy and shrimp stir fry
    Sat: Tuscan-style grilled ribs, grilled zucchini, grits with carmelized onions and pancetta

    Monday: Black bean sloppy joes
    Tuesday: BBQ black bean tacos
    Wednesday: Creamy tomato and spinach pasta
    Thursday: Sweet potato black bean quesadillas
    Friday: To be determined/leftovers
    Saturday: Pizza

    Yes, we eat a lot of black beans! I bought 50 pounds during the shutdown and we’re still working through them.

    We are camping In Foley, Alabama, with our two oldest grandchildren this week. We’ll be grilling several times.

    Sunday- grilled burgers, chips, carrot sticks and grapes
    Monday- grilled chicken, grilled corn on the cob, Mac and cheese
    Tuesday- breakfast for dinner. Scrambled eggs, grits, bacon ( cooked in the air fryer)
    biscuits ( baked in the air fryer)
    Wednesday- grilled steak, baked potatoes, salad
    Thursday- Go out
    Friday- grilled hot dogs, chili, air fryer fries
    Saturday- head home and eat all the left overs for dinner

    Mon: Black bean, sweet potato, & goat cheese empanadas
    Tue: Maple chicken, mashed potatoes, peas
    Wed: Chicken parmesan, salad
    Thu: Scrambled eggs, toast, fruit
    Fri: Bean burritos, guacamole & chips
    Sat: First dinner with family since pandemic started! We’ll be outside & maintain social distance

    Wednesday: Cheesy Chicken Rice Bake with Avocado and Tomato

    Friday: Chicken Gyro with Tahini and Scallion Yogurt and Greek Salad

    Saturday: Fried Fish Tacos with Cabbage Slaw

    Sunday: Father’s Day–Hubby wants Big Mac Copycat Burgers and Homemade Fries and Toffee for his treat 🙂
