Week 681 Weekly Menu

Not only was I crazy late with my menu last week, I ended up not following it at all, except for the Indian food takeout for Nate’s birthday. Bravo, Jane! πŸ˜‰ So, lots of carry-over from last week. That’s life!

Week 681 Weekly Dinner Menu: Monday - Carne Asada Salad; Tuesday - Pesto Pasta; Wednesday - Baked Potato Bar; Thursday - Bistro Chicken; Friday - Leftovers; Saturday - Local Takeout; Sunday - Caprese Paninis

    Sun: Pizza, salad
    Mon: Salad with grilled chicken, goat cheese, walnuts, and blueberries
    Tue: Sweet potato & black bean enchiladas
    Wed: Fish taco bowls
    Thu: Chicken fried rice
    Fri: Lasagna, salad, garlic bread, birthday cake for my husband
    Sat: Grilled salmon, corn on the cob, grilled potatoes

    Happy 4th of July!!!!

    Sun: Chicken and mushrooms with cream cheese sauce over pasta (one of the kids’ favorites since they were little)
    Mon: Grilled halibut burritos with crema guacamole and napa slaw
    Tues: Baked halibut wrapped in swiss chard and lemons
    Wed: leftovers
    Thurs: shrimp Clemenceau over shoestring potatoes (never got to it last week)
    Fri: pork ribs, grits, steamed artichokes
    Sat: leftovers

      Halibut wrapped in Swiss chard & lemons and Shrimp Clemenceau sound delicious! I’m putting both on my menu for nest week. Thanks!

      Enjoy, Kim! The halibut recipe is from Bon Appetit magazine from 2007, and I am currently using Emeril Lagasse’s Shrimp Clemenceau’s recipe. I used a different one for years, but I like his the best.

    • the chicken and mushrooms on pasta sounds like just the kind of meal I loved growing up, too!

      Jane, I think this was the only meal in the repertoire where the were zero complaints from anyone in the family. Tough crowd…

    Monday: Black bean pasta bowl
    Tuesday: Casserole repeat
    Wednesday: Pasta repeat
    Thursday: Leftovers
    Friday and Saturday: At family, Lord willing!

    Wednesday- leftover lamb korma
    Thursday- leftover zucchini parm
    Friday – take out and Hamilton!

    Saturday: Cookout–Watermelon Slushees, Lamb Burgers, and Corn Salad

    Sunday: Beef Pho and Cucumber Salad

    Monday: Tacos (ground beef, avocados, tomatoes, black beans)
    Tuesday: Lasagna
    Wednesday: Burgers on the grill and corn on the cob
    Thursday: Fish and chips and roasted broccoli
    Friday: Still working on my Hamilton Watch Party menu (ala History Has It’s FRIES On You) πŸ™‚
    Saturday: 4th of July party…bringing Shaved Brussels Sprouts Salad and Buttered Popcorn Bars
