Week 688 Weekly Menu

Hello! I’m back! I never actually got to planning last week’s menu with our mini-vacation, and am so grateful some of you still shared yours. Thank you! I also sat down to plan this week’s menu and realized I totally didn’t follow the menu from two weeks ago, so I’m mostly just using that menu again. Might as well! Apparently I’m in summer mode and livin’ fast and easy with dinners. 

Week 688 Weekly Menu: Monday - Red Beans and Rice; Tuesday - Frittata; Wednesday - Gumbo; Thursday - Leftovers; Friday - Caprese Paninis; Saturday - Takeout; Sunday - Island Pork


  • Red Beans and Rice (my 12 yo is taking an online cooking class and that is this week’s menu, so Anna is cooking dinner, fun!)


  • Summer Frittata



  • Leftovers



  • Local Takeout Night

    Tuesday: cilantro lime chicken tacos with black beans
    Wednesday: cilantro like chicken sandwiches
    Thursday: leftovers
    Friday/Saturday: with family so they get to make the menus!

    Tuesday: Pesto pasta and asparagus
    Wednesday: Cucina Bologna takeout
    Thursday: Orange chicken with rice and broccoli

    Saturday: Takeout

    Sunday prep: cook chx, cut carrots, celery, apples
    M- chx Caesar salad (iceberg lettuce)
    sweet potatoes for lunch – baking in the morning in the air fryer
    T- nonfat bean burrito night and salad, or leftover chx salad
    W- summer pasta salad with garden rotini pasta with celery, carrots, Italian dressing, olives
    Th- el pollo loco family deal
    Fr- leftovers
    Sat- turkey meatloaf or canned soup

    Desserts/snacks: yogurt with cherries, nonfat yogurt and carrots

    Wed: Chicken stuffing casserole
    Thu: Leftovers

    Sat: Chicken burgers, baked fries

    It’s been 110 for a week here in NorCal, so I’m avoiding turning on the oven as much as possible

    Mon – ham and cheese waffles, fruit smoothies
    Tues – spicy shrimp pasta, salad
    Weds – crockpot drip beef sandwiches, coleslaw
    Thurs – grilled jalapeño lime chicken thighs and corn
    Fri – local takeout
    Sat – leftover drip beef as tacos or nachos
    Sun – teriyaki pork chops and pineapple fried rice
