Hello! I’m back! I never actually got to planning last week’s menu with our mini-vacation, and am so grateful some of you still shared yours. Thank you! I also sat down to plan this week’s menu and realized I totally didn’t follow the menu from two weeks ago, so I’m mostly just using that menu again. Might as well! Apparently I’m in summer mode and livin’ fast and easy with dinners.

- Red Beans and Rice (my 12 yo is taking an online cooking class and that is this week’s menu, so Anna is cooking dinner, fun!)

Desserts/snacks: yogurt with cherries, nonfat yogurt and carrots

It’s been 110 for a week here in NorCal, so I’m avoiding turning on the oven as much as possible

Weds – crockpot drip beef sandwiches, coleslaw
Thurs – grilled jalapeño lime chicken thighs and corn
Fri – local takeout
Sat – leftover drip beef as tacos or nachos
Sun – teriyaki pork chops and pineapple fried rice
