Week 694 Weekly Menu

I completely forgot to plan my menu yesterday! Happy birthday to me! 😉 This week I probably need a menu more than most weeks and yet I’m least prepared! My company Velodyne Lidar is set to go public and I’m on the communications team, so I honestly feel like if we get cereal on the table it will be considered a win!  

Week 694 Weekly Dinner Menu: Monday - Leftovers; Tuesday - local takeout; Wednesday - Chicken Pesto Pasta; Thursday - Brats and Hot dogs; Friday - Caprese Salad; Saturday - Local Takeout; Sunday - Grill Night

  • Chicken Pesto Pasta (using store bought pesto & rotisserie chicken!)

  1. Oh, very exciting for you and your company!! I had a couple weeks like that this month. I hate feeling like I’m behind the 8-ball. No fun!!!

    Sunday: Burgers on the grill and corn on the cob
    Monday: Lettuce cups (ground beef, cheese, quinoa)
    Tuesday: Pasta and meatballs and cauliflower rice
    Wednesday: Baked mac and cheese and roasted butternut squash
    Thursday: Chicken nuggets and roasted broccoli
    Friday: Pizza night
    Saturday: Takeout!

    Empty nest! Now I have to learn to resize my meals for just two people.

    Sun: Grilled Santa Maria style tri-tip, corn on the cob
    Mon: leftovers
    Tues: Grilled chicken, spaghetti squash in the Instant Pot
    Wed: leftovers
    Thurs: Grilled king salmon, grilled zucchini
    Fri: Tomato beef chow mein
    Sat: leftovers

    Wednesday: Chicken Bacon Avocado Salad with Strawberry Vinaigrette

    Thursday: Individual Meatloaves and Cheesy Rice and Roasted Asparagus

    Friday: Pitas with Meatballs and Yogurt Sauce with Zucchini and Tomato Salad

    Saturday: Fried Chicken Sandwiches and Pickled Vegetable and Goat Cheese Salad

    Sunday: Jambalaya and Corn on the Cob

    I love all the ideas and inspiration! We have been doing our menus a little different from our “norm” since March. I plan out 10 days worth of meals but we really don’t assign any of them to specific days, unless its a special occasion (i.e. birthday, first day of school, etc.)


    1 – Grilled hamburgers, french fries, & broccoli salad

    2 – Insta-pot mexican sweet chicken tacos, beans, & rice

    3 – Egg salad sandwiches, chips, dip, & fruit

    4 – Chicken srip salads & bread sticks

    5 – Ravioli, garlic bread, & peas

    6 – Bread stick pizzas, fresh fruit, and salad

    7 – Pulled pork, potato salad, sweet carrots, & rolls

    8 – Fast food take out

    9 – Steakhouse take out

    10 – Asian take out
