Week 698 Weekly Menu

WOW. I completely spaced planning and posting a menu last week. I didn’t even realize until Wednesday or Thursday! This probably is a good indication of where our family is with dinner these days…flying by the seat of our pants! I am still unable to cook, so we’re utilizing Costco and Trader Joe’s meals to at least make it feel a little like eating dinner at home instead of just takeout all the time. Here’s a go at a menu…

    Sun:  Provencal Chicken with Tomatoes and basil; roasted rosemary mini-potatoes
    Mon: Grilled steak, smashed potatoes, butternut squash soup
    Tues:  Japchae with bulgogi pork
    Wed:  leftover steak and potatoes, stir-fried snow peas and water chestnuts
    Thurs: 3-mushroom sauce with pasta; roasted asparagus
    Fri: Eggplant, tomato, and chickpea casserole; pita bread and tzatziki
    Sat: Tomato and lime fish soup; cornbread

    Sun: Chicken cheesesteaks, sliced apples
    Mon: Lemon cod, baked potatoes, peas
    Tue: Spaghetti with garlic/basil sauce, salad
    Wed: Maple chicken meatloaf, butternut squash
    Thu: Salmon, rice, broccoli & cauliflower
    Fri: Shrimp & garlic pizza,salad
    Sat: Crab cakes & chicken fingers (I somehow have just a few of each left in the freezer and want to use them), mixed veggies

    Sunday- leftover pizza and wings
    Monday- chorizo and white bean soup with bread
    Tuesday- chicken curry
    Wednesday- salmon, rice and Brussels sprouts
    Thursday- fish and chips
    Friday – take out to support a local restaurant
    Saturday- steak on the grill

    Sunday: Salmon with Greek salad, roasted asparagus, rice
    Monday: Stuffed Pepper Soup, homemade rolls
    Tuesday: Chicken Gyros, rice pilaf
    Wednesday: Hamburger steaks with mushroom gravy, green beans, salad
    Thursday: Pork Chops, mashed potatoes, applesauce, steamed broccoli
    Friday: Leftovers or (Gyro skillet)
    Saturday: Cobb Salad, homemade bread

    Monday: Cauliflower Tacos with Fresh Vegetables

    Tuesday: Slow Cooker Red Beans and Rice and Green Beans

    Wednesday: Jalapeno Popper Chicken Breasts with Corn

    Thursday: Easy Chicken Fajitas and Fresh Salsa and Guacamole

    Friday: Chrissy Teigen Burger and Salad

    Saturday: Garlic and Ranch Chicken Wings with Baked Sweet Potato Fries

    Sunday: Creamy Lemon Garlic Chicken and Cheesy Mashed Potatoes and Carrots

    Sun- pigs in a blanket and mixed veggies (Costco)
    M- pasta with meatballs , eggs and toast for lunch
    T- Del Taco or Clam chowder, cheese sandwiches for lunch
    W- chicken tenders
    Th- pizza
    F- chicken salad
    Sat- lentils? Or 50/50 lentil/beef hamburgers
