Week 702 Weekly Menu

Hello again! I hope you all had a wonderful and delicious Thanksgiving! Apologies for missing the menu last week, I just plain forgot to plan because we had a major backup of meal kits thanks to our Thanksgiving food. I am still relying on meal kits for the next few weeks, but around Christmastime I am going to get back into cooking my own recipes again! The Hello Fresh meal kits have been so wonderful during this time where my cooking abilities were limited.

Week 702 Weekly Dinner Menu


  • Pecan-Crusted Trout (a friend gave me a Green Chef box to try…Green Chef was good, but I like Hello Fresh better, for what it’s worth!)


  • Tex Mex Beef & Poblano Enchiladas (Hello Fresh)


  • Firecracker Meatballs (Hello Fresh)


  • Hot Honey Chicken (Hello Fresh)


  • NYC Street Cart Steak Bowls (Hello Fresh)


  • Local Takeout (San Diego is back on lockdown…gotta make sure to keep on supporting local restaurants!)

    Sun: Duck ragu sauce with homemade pasta; sautéed green beans
    Mon: Porchetta, sauteed kale
    Tues: leftovers
    Wed: Mushroom risotto, sautéed green beans and celery
    Thurs: Chinese style pork ribs with black bean sauce, nappa sautéed with miso
    Fri: Butternut squash and chickpea stew
    Sat: Turkey hash with Creole tomato grits

    Monday: One Pan Four Cheese Tomato Spinach Bake

    Tuesday: Sausage, Bean and Pasta Stew and Peas

    Wednesday: Chicken Parmesan and Salad

    Thursday: Beef and Bean Burritos and Corn

    Friday: Guacamole Bacon Burgers and Fresh Veggies

    Saturday: Beef and Cheese Enchiladas and Cabbage Slaw

    Sunday: Chipotle Chilichangas with Beans, Rice and Corn

    We always have Pizza Night on Fridays. Pre-COVID, we made homemade pizzas, but now we support our favorite, local pizza joints. Spread the love. <3

    Sunday: Orange chicken with rice and roasted broccoli
    Monday: Pasta with meatballs and roasted asparagus
    Tuesday: Yorkshire pudding with cranberry sauce and Parmesan roasted cauliflower
    Wednesday: Burgers and potato wedges
    Thursday: Full-loaded twice-baked potato and green beans
    Friday: Pizza night!
    Saturday: Takeout!!

    Sun: Meatloaf, carrots
    Mon: Lime shrimp, brown rice, black beans
    Tue: Chicken cheeseburgers
    Wed: Sheet pan roasted salmon, brussels sprouts, squash, & pomegranate seeds
    Thu: Egg tacos, black beans
    Fri: Chicken fingers, baked fries
    Sat: Seafood stew with fennel and orange, crusty bread

    Sunday- black bean soup and meatball sandwich
    Monday- Salmon, rice and broccoli
    Tuesday- black bean soup
    Wednesday- chicken tacos
    Thursday- last of the soup!
    Friday- take out!
    Saturday- spaghetti with shrimp
