Week 706 Weekly Menu

This is going to be our first week in over two months where I am not getting a Hello Fresh meal kit delivery. Going to try “roughing it” again. Which mostly means I have to do my own grocery shopping this week…ugh!

    Tuesday: Copycat Big Mac Burgers with Corn

    Wednesday: Slow Roasted Salmon with Fresh Herb Salsa, Bread and Salad

    Thursday: Cheddar Scallion Waffle Chicken Sandwiches with Fresh Veggies

    Friday: Bacon Cheeseburger with Jalapoppin Bites and Fresh Veggies

    Saturday: Bob Armstrong Dip with Rice and Beans and Slaw

    Sunday: Beef Chimichanga with Guacamole and Corn and Black Bean Salad

    I just got my first Covid vaccine!!!!

    And our new dishwasher is arriving tomorrow (ordered in beginning of Sept. No DW since August!)

    It feels like Christmas 🙂

    Mon: Chicken & black bean enchiladas
    Tue: Tomato soup & grilled cheese sandwiches
    Wed: Salmon, green beans
    Thu: Halibut, butternut squash
    Fri: Pizza, salad
    Sat: Chicken burgers, carrot & celery sticks

    For Christmas, I got the new Ina Garten cookbook (Modern Comfort Food) as well as the America’s Test Kitchen One-Pan Wonders cookbook! My resolution for 2021 is to cook my way through them! I’m so excited!

    Sunday: Crispy Chicken with Lemon Orzo (Ina Garten) and roasted broccoli
    Monday: Pad Thai with chicken and broccolini (Ina Garten)
    Tuesday: Chipotle Beef Chili Bowl w Lime-Cilantro Crema (ATK recipe)
    Wednesday: Golden fried rice and asparagus
    Thursday: Shaksuka (ATK recipe)
    Friday: Homemade pizza night!
    Saturday: Takeout!
