Week 708 Weekly Menu

Nate smoked 10 pounds of pork shoulder this weekend and we are all once again super glad we got him a Traeger grill for Christmas. Going to re-purpose the pork for enchiladas with a red sauce and tacos with pickled onions. 

Quick hand surgery update: procedure ended up not happening last week but is instead scheduled for 1/25. So I’m planning to cook a lot this week, then next week getting Hello Fresh for the kids and Nate to cook. Not at all excited about the assessment by the surgeon last week but grateful for professionals who can fix this useless thumb for me.

    This week is full of cold weather comfort meals. The spaghetti, soup, and chicken & dumplings make a lot. I’ll freeze half of each for easy dinners in the future:

    Sun: Million dollar spaghetti, salad
    Mon: Leftovers
    Tue: Seared scallops, coleslaw, corn
    Wed: Turkey Rachels
    Thu: French onion soup
    Fri: Crockpot chicken & dumplings
    Sat: Leftovers

    Saturday: Chili Cheese Fries and Fresh Veggies

    Sunday: Charred Corn Totchos with Beer Queso and Cilantro Lime Crema (Ashley Rodriguez)

    Tues – Pepper Jack Mac & Cheese w/Bacon, Roasted Broccoli
    Wed – Crispy Chicken w/Creamy Italian Sauce on Bow Ties, Salad
    Thurs – Roasted Turkey Breast, Mashed Potatoes & Gravy, Glazed Carrots
    Fri – Crispy Chicken BLT Salad
    Sat – Take Out
    Sun – Chicken Parmesan, Salad, Breadsticks

    I made a menu!

    Mon: burger sliders
    Tues: everything bagel chicken
    Wed: chicken Schwartz
    Thurs: tacos
    Fri: leftovers
    Sat: broccoli quiche

    I grocery shopped with these meals in mind, then wrote the menu up and posted it on the fridge. That way whoever has the nerve to ask what’s for dinner can be directed to start cooking!

    Monday- salmon, mushroom risotto, shredded Brussels sprouts
    Tuesday – chicken breasts, leftover risotto, salad
    Wednesday- celebratory pizza! New President!
    Thursday- some kind of soup!
    Friday- take out!
    Saturday- leftover soup?
