Hi everyone! Let’s get down to it, shall we? (And, yes, those are Hello Fresh meals below and, no, I’m not normally fancy like this.)

MONDAY:

  • Korea Beef Bibimbap

  • Pork Enchiladas

FRIDAY:

  • Rosemary Demi-Glace Pork Chops

SATURDAY:

  • Leftovers

SUNDAY:

  • Meat Smoking Night

    We’re still on the cook once and eat twice (or thrice!) plan!

    Sunday/Monday: Spinach quiche
    Tuesday/Thursday: Quinoa tacos
    Wednesday: Baked potatoes with toppings
    Friday: Leftovers or ???
    Saturday: Dinner with our small group leaders from church

    Don’t forget Easter in this coming Sunday so add some potatoes and carrots to what ever meat you are smoking!

    Sun: Roast turkey roasted Japanese purple sweet potatoes, collard greens with bacon
    Mon: Ma-po tofu over rice, steamed artichokes
    Tues: Grilled salmon, roasted root turnips and kohlrabi with shallot vinaigrette
    Wed: leftovers
    Thurs: Pork brochettes with creamy grits and bourbon sauce
    Fri: leftovers
    Sat: Beef and celery stir-fry

    Tuesday: Slow Cooker Greek Chicken and Potatoes and Cauliflower

    Wednesday: Pork Saltimbocca and Greek Pasta Salad

    Thursday: Sausage and Fennel Pizza

    Friday: Lasagna and Caesar Salad

    Saturday: Chicken with Snow Peas and Red Pepper Flakes

    Sunday: Honey Roasted Ham with Mustard Mornay Sauce, Mashed Potatoes and Brussels Sprouts and Coconut Cream Pie

    Monday- beef chili
    Tuesday- day at the beach! Then picking up Chinese take out on the way home
    Wednesday- spaghetti and sausage
    Thursday- takeout
    Friday – fish and chips
    Saturday- leftovers
    Sunday – ham, Brussels sprouts, Mac and cheese

    Tue: Seared scallops with white wine citrus sauce, green beans
    Wed: Baked tuna potatoes, salad
    Thu: Shrimp and pineapple fajitas
    Fri: Honey goat cheese pizza (carryover from last week)
    Sat: Chicken cheeseburgers, sun chips

    Thurs – Spinach and Feta Stuffed Chicken, Cucumber/Tomato Salad
    Fri – Eat Out
