Hello everyone! I blew it with last week’s menu…thanks to Spring Break and Easter! But we’re back to normal this week…

    Sun: Roasted sausage with fennel & orange, mashed potatoes
    Mon: Lemon garlic chicken, baked beans, corn
    Tue: Bow tie pasta with shrimp, peas, and parmesan sauce. Salad.
    Wed: Business trip (ugh! Back to travel! Husband will eat leftovers)
    Thu: Business trip
    Fri: Eggs & toast
    Sat: Baked chicken, baked sweet potato, salad

    Tuesday: Broccoli Rice Cheesy Bake

    Wednesday: Cilantro Smash Burgers and Salad

    Thursday: Curried Meat Pies, BBQ Baked Beans and Bulgur Salad

    Friday: Hubby’s Birthday–Chipotle Chilichangas, Salted Chocolate Chip Cookies

    Saturday: Belgian Beef Stew, Fries and Bitter Greens with Hazelnut Vinaigrette

    Sunday: Beef Enchiladas and Corn
