    Sunday- beef fajitas
    Monday- going to the beach for the day – so getting take out
    Tuesday- salmon, roasted potatoes, zucchini
    Wednesday- we watch Ted Lasso and have a British pub meal! Pasties and fries tonight!
    Thursday- spaghetti with shrimp
    Friday- leftovers
    Saturday- burgers on the grill

    Monday: Chicken in a Pot with Red Potatoes, Carrots, & Shallots (ATK recipe, p134)

    Tuesday: Grilled Chiciken Souvlaki (ATK magazine, p14) and Spanikorizo (Spinach rice)

    Wednesday: Taco Night (ground beef and the fixins’)

    Thursday: Huevos Rancheros (ATK recipe, p129)

    Friday: Pizzas

    Saturday: Out

      Fri: Homemade fish nuggets with tartar sauce, corn on the cob
      Sat: Pad Thai (I’m trying a meal kit from The Fresh Market)

    Tues: zucchini stuffed with smoked salmon
    Wed: leftovers
    Thurs: leftovers
    Fri: rigatoni with crab, tomatoes and leeks
    Fri: leftovers

    We’re back to the cook once, eat twice plans, so our meals are

    Chickpea chana masala with cilantro lime brown rice

    Creamy jalapeño chicken tacos

    Hubby’s to-be-determine menu

    Snack-y Foods
    Western Beef and Corn Pie
    Beef and Broccoli Stir-Fry, Fried Rice
    Taco Salad
    Chicken in Fresh Tomato and Ricotta Simmer Sauce, Pasta or Gnocchi

    I’m late this week 🙂 but here’s what we did/are doing:

    Monday: Brussels Sprouts Quesdadillas with Avocado and Fresh Veggies

    Tuesday: Lamb and Feta Meatballs, Hummus, Naan and Salad

    Wednesday: Chicken con Chochoyotes and Fresh Veggies

    Thursday: Mini Beef/Bean Chimichangas and Avocado and Fresh Salsa

    Friday: Cajun Spiced Clam Chowder and Garlic Rolls

    Saturday: Tostadas de Tinga Poblano, Fresh Veggies, Guacamole and Salsa

    Sunday: Stuffed Mushroom Cups and Lobster Rolls
