Week 726 Weekly Dinner Menu

Hey everyone. The last two weeks we’ve been dealing with COVID-19 in our home. Nate, Anna (13) and I all came down with COVID-19 (yes, we are all vaccinated and, yes, we were all symptomatic). First off, I am so grateful we are all coming out of this healthy. Secondly, I am grateful we were vaccinated because I definitely would not have wanted symptoms to be worse. COVID-19 really threw Nate and I for a loop! Bottom line, whether or not you are vaccinated, be careful out there! Wear a mask! Wash your hands! Watch out for eating indoors at restaurants (the source of our cases). 

Last Sunday I was probably asleep in a tent in the backyard, hence no menu. I also did not cook all week – we relied on ready-made meals delivered by my wonderful sister-in-law, Cora. Today I actually feel more like myself again and am looking forward to getting back to work, hugging my kids as much as I want, and making food for our family!

One more thing…Hello Fresh vs. Blue Apron!

For those of you wondering if I like Hello Fresh or Blue Apron better…I ended up giving two weeks of Blue Apron meals to my sister-in-law (thanks, COVID). The meals we DID have were delicious. I like Hello Fresh’s packaging much better, though, and I think the meals are a little more successful for every member of the family. Plus Hello Fresh has more choices each week.     Sun: Beef braciola rolls with marinara and pasta
    Mon: Broiled halibut, purslane sautéed in miso
    Tues: Grilled chicken, Shirazi salad, air fryer okra
    Wed: leftovers
    Thurs: leftovers
    Fri: Patty pan squash parmagiana with pasta
    Sat: takeout Mexican food

    So sorry to hear that you all had COVID! I also had it with symptoms post vaccination. I am so thankful for the vaccination, though, as my symptoms were minor, and I believe I recovered more quickly as a result. I hope you all heal well and remain healthy!

    Our menu:

    Sunday: Gold nugget meat pie and broiled rosemary polenta wedges (made with leftover polenta in the freezer)

    Monday/Wednesday: Hawaiian chicken and rice

    Tuesday/Thursday: Street-Style beef tacos

    Friday: Sandwiches at an event

    Saturday: Out for pizza

  3. You cannot catch a break!! SO glad to hear you’re on the mend and were properly fed during your convalescence. Everyone’s activities this year are bonkers (mine included). We can eat at 4:30 or 8:30….no in betweens. I am trying to plan meals that can be served twice or are super-quick. And, thanks for the meal service reviews!

    Sunday: Hands-off Spaghetti & Meatballs (ATK, p235)

    Monday: Mexican-style Spaghetti Squash Casserole (ATK, p220) and chicken breasts

    Tuesday: BLT salad and roasted broccoli

    Wednesday: Vegetarian chili with Italian bread

    Thursday: Asian salmon and roasted cauliflower

    Friday: Homemade pizzas before FNL at the high school

    Saturday: Out

    • bonnie, that is absolutely how it has felt this year…who knew 2020 would be BETTER than 2021? haha!

      the 4:30 vs 8:30 eating times is crazy, but I don’t doubt you of all people have it figured out!

    Sunday- burgers on homemade pretzel rolls!
    Monday – salmon, rice and rutabaga fries
    Tuesday – chicken curry with rice
    Wednesday- homemade Cornish pasties and fries
    Thursday – leftovers
    Friday- lots of Cornish pasties (ham&cheese, beef, lamb and chicken curry)
    Saturday- take out!

    So glad to hear you are feeling better. – thank the lord for the vaccine!

    Saturday: Roasted Potato and Cauliflower Burritos with Black Bean and Corn Salsa

    A week at the beach celebrating my parent’s 60th wedding anniversary!

    Sun: Shrimp scampi, salad
    Mon: Grilled halibut, baked potatoes, coleslaw, french rolls
    Tue: Baked Tile fish, steamed clams, roasted spuds, green salad with colorful tomatoes
    Wed: Ciopinno, sourdough bread
    Thu: Surf and turf, green beans with shallots, salad
    Fri: No dinner. Too full from this week!
    Sat: Scrambled eggs and toast

    So sorry you and your family had covid! So happy you are vaccinated, but scary that you still got covid!
    All of our feasts above were cooked by us. We decided to stay away from indoor and outdoor restaurants to stay as safe as possible.

    I”d love a hello fresh box! I am moving back to the USA from Spain in november and I think getting hello fresh delivered will be a great start to meal planning.

    Sun: Pulled pork tacos
    Monday: Leftovers
    Tuesday: Fideua noodle dish
    Wed: Slow cook chicken legs
    Thurs: Lentil salad and????
    Friday:Date night, kids get something simple like a ham & Cheese croisannt.
