Week 728 Weekly Menu

HELLO. Whoah boy. 2021 has been a year. I have missed you all the last month or so. I know everyone is busy and life is hard, but for real the past several months have been a doozy in our household. All is well, but cooking dinner has fallen by the wayside and I have been dropping balls left and right, including my weekly menu planning. One of you wonderful people sent me an email this week to check in and make sure everything is okay, which was beyond sweet and thoughtful.

Week 728 Weekly Dinner Menu

SO. My menu is late this week. But I’m just gonna get it published and try to hop back on this meal train! I have always firmly believed that planning and shopping at the start of the week makes life so much better. So, in the interest of my own sanity, I am going to get back to it. 


  • Smoked brisket with salad and cornbread


  • Leftovers


  • Rubio’s and Panda Express (real talk, y’all)


  • Hello Fresh to the rescue! Italian chicken over lemony spaghetti


  • More Hello Fresh! Sweet chili pork bowls


  • Hello Fresh again! Mushroom chive risotto


  • Smoked pork shoulder

I appreciate all of you so much! I love our little corner of the web here on This Week for Dinner. Can’t wait to see your menus and “see” all of you each week once again.

    Life is a doozy sometimes, but we all gotta eat! We’re ever trying to simplify, with a few “splurges” here and there:

    Sunday: Freezer pizza
    Monday/Wednesday: Instant Pot Italian sausage and spinach soup
    Tuesday/Thursday/Friday: Veggie Tacos
    Saturday: Dip night (Crackers, cream cheese and jalapeno jelly; nachos)

    Glad everyone’s ok and you’re coming up for air!

    Friday night is always pizza night in our house. I found a new America’s Test Kitchen recipe for French Bread Pizzas. No dough proofing and on the table in 30min. It’s a winner and I’m in love.

    Sunday: Twice-baked potatoes
    Monday: Vegetarian chili and Italian bread
    Tuesday: Unstuffed Shells with Butternut Squash & Leeks (ATK recipe, p9)
    Wednesday: BLT Salad with roasted asparagus
    Thursday: Orange Chicken with rice and roasted broccoli
    Friday: Homemade French Bread Pizzas
    Saturday: Out

    Sun: Spanish-style beef stewed in wine and chocolate over rice
    Mon: Pasta sauce (the farmer’s market actually had San Marzano tomatoes this late in the season!)
    Tues: Shrimp in lobster sauce, green beans sautéed in fermented bean curd
    Wed: leftovers
    Thurs: leftovers
    Fri: veal chops, brussels sprouts with bacon
    Sat: eat out: marching band competition at Mira Mesa HS (ought to be selling lumpia and pancit)

    So glad you are okay! I’ve been worried about you and your family! Life gets crazy sometimes!
    Meal planning helps me stay sane even though it’s just my husband and me now that the kids all have homes of their own!
    Sunday – stuffed cabbage soup (something quick before the trick or treat bunch!)
    Monday – husband got his booster yesterday and was taking things a bit slow today so we had the leftover soup!
    Tuesday – salmon, roasted broccoli and egg noodles
    Wednesday – a big salad!
    Thursday – scallops and pasta
    Friday- Mexican take out
    Saturday- fancy meal out with my daughter and son-in-law then an art show!

    So glad you are back Jane!

    Good to know all is OK! I was worried, especially since your household was experiencing covid in one of your last posts.

    Sun: White chicken chili, corn bread
    Mon: Leftovers
    Tue: Southwest chicken salad, tortilla chips, guacamole
    Wed: Salmon, peas, mashed potatoes
    Thu: Chicken noodle soup, salad with berries and walnuts
    Fri: Stuffed chicken breast with maple glaze, carrots
    Sat: Swordfish steaks, baked sweet potatoes, corn

    • Oh, thank you Kim! COVID was NO JOKE, and definitely part of the crazy. We are lucky, though, and doing better all the time. Brain fog is real, though. LIFE!

    Monday: Pork Nachos with Avocado, Pickled Onions, Tomatoes, and Pickled Peppers

    Tuesday: Meatballs in Onion Gravy, Mashed Potatoes, and Peas

    Wednesday: Cheese Crusted Carne Asada Tacos with Fresh Veggies

    Thursday: Parmesan Peppercorn Chicken Breasts, Mashed Potatoes and Peas

    Friday: Chicken Fajitas, Salsa, Avocado, and Jicama Salad

    Saturday: Chicken Shawarma with Pickled Onions, Amba, Green Sauce and Naan

    Sunday: Scout Spaghetti Dinner
