Week 729 Weekly Menu

Hello! This week I’m only one day late and a dollar shot. Progress! Last week the company I work for ended up hosting a large virtual conference the same week as quarterly earnings and announcing a new CEO…and I was involved in the communications for all of it. I ended up cooking only one of our Hello Fresh kits (well, actually, my 13-yo cooked it), so this week we have a lot of Hello Fresh meals to eat. Fine by me! (And no, actually, this blog is not sponsored by Hello Fresh.)

Week 729 Weekly Dinner Menu from This Week for Dinner


  • Homemade Honduran Baleadas (thanks to my talented sister-in-law Cora – we are planning to do a post and share the recipe soon!)


  • Italian chicken over lemony spaghetti


  • Sweet chili pork bowls


  • Firecracker Meatballs


  • Citrus pork tacos

  • Cheesy smothered mushroom chicken

    Sun: Ropa Vieja burritos (Jeff Smith’s recipe I’ve used for 30 years)
    Mon: leftovers and corn on the cob
    Tues: Seafood Gumbo (Commander’s Palace recipe)
    Wed: Eggplant parm and pasta
    Thurs: leftovers
    Fri: leftovers
    Sat: Chinese eggplant and ground pork stir-fry

    Monday: Eggroll in a bowl and green beans

    Tuesday: Pasta Frittata with Sausage and Hot Peppers (ATK recipe, p70) and roasted asparagus

    Wednesday: Fried rice with a fried egg on top and roasted broccoli

    Thursday: Yorkshire Pudding with cranberry sauce and roasted acorn squash

    Friday: Homemade French bread pizzas

    Saturday: Out

    Monday/Wednesday: Cauliflower curry ans brown rice
    Tuesday/Thursday: Cajun chicken tacos
    Friday/Saturday: Leftovers/TBD

    Olive Garden dressing chicken sheet pan, asparagus
    Baked potato bar (bbq chicken, cheese, green onions, bacon bits, etc)

    Monday – salmon, Brussels sprouts and rice
    Tuesday – chicken and mushroom risotto
    Wednesday- Beef stew
    Thursday – leftovers
    Friday – take out!
    Saturday – burgers on the grill

    Saturday: Beef Stew and Root Vegetable Risotto

    Sunday: Bacon Ricotta Tart and Endive, Apple and Walnut Salad
