Week 739 Weekly Menu

We have one more day of Disneyland this week – our 3-day pass was for weekdays only and we are so glad we to have a couple of days between the 2nd and 3rd day. Not sure we could have done three days straight! Anyway, because of the busy-ness last week I did not use my menu at all. Going with the ol’ copy and paste trick this week. But your menus from last week sparked so many ideas for my next round of planning, thank you!

    We had leftover tacos today, and for the week are planning:

    Sausage and potato salad
    Thai chicken tacos

    Monday: Plantain and Refried Bean Quesadillas with Pico de Gallo and Fresh Vegetables

    Tuesday: Kung Pao Chicken, Rice and Peas

    Wednesday: Cheeseburger Sliders, Homemade Fries and Salad

    Thursday: Meatloaf Sandwiches and Broccoli

    Friday: Coconut Curry Chicken and Rice Noodle Soup and Biscuits

    Saturday: Blue and Gold Banquet, I’m bringing Mini Twice Baked Potatoes

    Sunday: Pepperoni Pizza and Caesar Salad

    Sun: Halibut, baked sweet potates, peas
    Mon: Thai shrimp salad, toast
    Tue: Beer cheese soup, soft pretzels, salad
    Wed: Shrimp scampi with angel hair pasta, salad
    Thu: Pan seared cod with tomatoes & olives, rice
    Fri: Slow cooker white bean stew, crusty bread
    Sat: Leftovers

    Sunday – tacos at my daughter’s to celebrate her birthday!
    Monday – having the grandkids sleepover! Ordering their fav, pizza!
    Tuesday – Hot dogs with the grands!
    Wednesday- back to normal! Salmon, rice, zucchini and salad
    Thursday – scallops and pasta with salad
    Friday – take out
    Saturday- leftovers

  5. Sunday: Friends over for dinner

    Monday: Jimmy John’s after busy day

    Tuesday: Rib-eye Steak with roasted Vegetables & Sage Butter (ATK Meal Prep)

    Wednesday: Bibb Lettuce and Chicken Salad & Peanut Dressing (ATK Meal Prep)

    Thursday: Seared Scallops with Squash Purée and Sage Butter (ATK Meal Prep)

    Friday: French Bread pizzas

    Saturday: Out

    Mon: Fried rice (brought back some “real” Chinese sausage from a hole-in-the-wall meat preserver in San Francisco Chinatown)

    Tues: Ground beef and creamed corn over rice (my favorite dish as a kid)

    Wed: Turducken out of the freezer from Thanksgiving, stovetop candied yams, cranberry sauce

    Thurs: leftovers

    Fri: leftovers

    Sat: eat out
