I’m traveling a bit this week for work, so planning for that in our meals!

Oh man! I stress out when I’m traveling and set up meals for the family in my absence. 🙂 We keep some “emergency” Trader Joe’s frozen meals on-hand for just such an occasion. I also found sheet pan meals are “so easy, a Dad can do it” (his words; not mine!).
Sunday: “Fend For Yourself Night” after studio dance competition
Monday: Skillet Tortellini with Sausage and Tomatoes (ATK Meal Prep)
Tuesday: Parmesan Chicken with Cherry Tomato Salad (ATK) before 4th grade Lion King production!
Wednesday: Chicken & Rice with Chorizo and Artichokes
Thursday: Prosciutto-wrapped Pork Tenderloin with Lemon Broccolini (ATK)
Friday: French Bread Pizzas
Saturday: Out.
Sun: Ribollita (got the idea while re-watching Stanley Tucci’s Italian food documentary), corn on the cob
Mon: homemade steamed bbq pork buns (with extra char siu I made a few weeks ago) & steamed Chinese sausage buns, frozen xiao long bao, steamed broccoli
Tues: grilled whole fish with braised radicchio in anchovy sauce (Lidia Bastianich recipes)
Wed: leftover ribollita, green salad
Thurs: leftover Chinese buns
Fri: takeout
Sat: lamb with lentils (recipe from Bon Appetit magazine)
Meal prep time got reduced for me this Friday, so our meals for this week had to be simple:
Instant Pot baker potatoes and toppings
Big batch white beans and pumpkin muffins
Curried cauliflower tacos with pineapple salsa
After we run out of those, we’ll be doing take-out or throwing something together.
Travel safely!

Sunday- maltaschen and salad
Monday – salmon, broccoli, rice and salad
Tuesday – gumbo!
Wednesday – stir fry scallops
Thursday – leftovers
Friday – take out
Saturday – spaghetti with meatballs and salad
