    Our meals:

    Sunday: Leftover homemade pizza
    Monday/Wednesday: Potato and leek soup with leftover pumpkin muffins (channeling our fall vibes, I guess)
    Tuesday/Thursday: Breakfast sausage tacos with pineapple salsa
    Friday/Saturday: TBD

    Sun: Bulgogi beef, japchae noodles, sugar snap peas sautéed in mirin and soy sauce

    Mon: Honeynut squash and ricotta ravioli in sage brown butter sauce (made my own ricotta again)

    Tues: Beef chow fun

    Wed: Teriyaki chicken, leftover japchae

    Thurs: leftovers

    Fri: eat out

    Sat: Chicken enchiladas

    Tuesday – Alison Roman Goodbye meatballs with spaghetti and whole wheat baguette

    Thursday – corned beef hash with leftover corned beef
    Friday- Mexican take out
    Saturday – steak, baked potatoes and salad

  7. I recently stumbled upon your recipe for tip tip rice salad taco night and I just had to leave a comment to let you know how much I loved it! As someone who loves Mexican cuisine and is always on the lookout for new and exciting ways to enjoy it, your recipe really hit the spot.

    The combination of the fluffy rice, tangy salsa, creamy avocado, and crisp lettuce made for a delicious and refreshing salad that was perfect for a warm evening. And the addition of the seasoned ground beef made it feel like a hearty and satisfying meal that my whole family enjoyed.
