Week 742 Weekly Menu

It is crazy how work travel really throws off grocery shopping and cooking. After two weeks in a row having trips, I am home for a good while now. While figuring out what to eat this week once I was home was a bit chaotic, I sure did eat well in Austin, Texas. So, you know, worth it…for me at least! (My family may disagree.)

    Monday: Borscht and pierogi
    Tuesday: Chipotle beet and egg tostadas again
    Wednesday: Homemade pizza
    Thursday: Baked potatoes and topping (or something else easy
    Friday: Leftover homemade pizza again
    Saturday: Instant Pot butter bean soup

    Sun: Boneless chicken thighs with Satsuma citrus glaze (from Kevin Belton’s Cookin’ Louisiana show), collard green frittata, buttermilk biscuits (an amazing recipe from a food memoir I’m reading by the former editor of Saveur magazine; the recipe is her mother-in-law’s. Her MIL grew up in a cabin/shack in the middle of nowhere in Mississippi and kept her family well-fed with this simple creation)

    Mon: corned beef and cabbage, hash brown potatoes

    Tues: Chinese tamales, braised Chinese broccoli

    Wed: leftover chicken thighs and biscuits, heirloom tomato concasse with wilted swiss chard (NY Times recipe)

    Thurs: leftover corned beef and cabbage

    Fri: Bacon-wrapped scallops; leftover concasse

    Sat: Stir-fry tofu, ground pork and leftover chard stems over bean thread noodles

    Sunday – slow roasted pork ribs, baked beans and salad
    Monday – salmon, cauliflower, rice and salad
    Tuesday- leftover pork on rolls, cole slaw and French fries
    Wednesday- chicken and veggie stir fry
    Thursday- leftovers
    Friday – take out pizza with the grandkids
    Saturday – curry take out

    Monday: Grilled Cheese and Bean Heros with Pico de Gallo and Avocado

    Tuesday: Chicken Tikka Masala, Rice Pilaf and Peas

    Wednesday: Pork Milanese with Arugula and Parmesan Salad

    Thursday: Garlic Chicken with Fried Rice and Peas and Carrots

    Friday: Flank Steak with Farro and Mango Salsa

    Saturday: White Wine Braised Chicken with Potatoes and Broccoli

    Sunday: Chicken Parmesan with Pasta and Salad

  5. Sunday:Orange Chicken (10yo’s birthday dinner request) with rice and crispy broccoli

    Monday: One-pan steak with potatoes, mushrooms & asparagus (ATK Meal Prep)

    Tuesday: Coriander Chicken with Cauliflower & Yogurt Sauce (ATK Meal Prep)

    Wednesday: Tortellini Salad with Asparagus and Mine (ATK Meal Prep)

    Thursday: BLT Salad

    Friday: French Bread pizzas

    Saturday: Out
