You know what is crazy? I started this blog right before I became pregnant with our second child, Anna…who is now a freshman in high school. This fact is kind of blowing my mind. Anyway, late start to planning this week after a very event-filled Homecoming weekend with the kids and my niece! Back to real life…
MONDAY:
- Spaghetti and meatballs (GF tip alert! I used Delallo’s Gluten-Free Spaghetti and Mulay’s Nana’s Meatballs (also gluten free) and it was great! Tasted like legit Italian food, thank the gluten-free gods!)
TUESDAY:
- Chicken Tikka Masala and Goan Coconut Paneer (I love the Maya Kaimal Indian food grocery products. I use their simmer sauces and everyday dal packs and every one we’ve tried has been fantastic.)
WEDNESDAY:
- Ancho BBQ Sloppy Joe, salad, chips
THURSDAY:
- Burrito Rice Bowls
FRIDAY:
- Leftovers
SATURDAY:
- Takeout night
SUNDAY:
- Smoked chicken (did I mention that this is our new favorite thing to smoke? Wow.)

This week, a little bit of everything:
— pesto pasta with baked zucchini fries
— corned beef hash with carrot, potato and cabbage
— broccoli cashew chicken over brown rice
— baked fish, sweet potato fries
— basic potato soup
— chicken with black bean sauce over rice
— cubed steak, brussels sprouts with lemon
When ten pound bags of chicken quarters go on sale cheap I smoke most of them and freeze. Then we can have it any time. 🙂
that is a GREAT idea on the chicken! we’ll have to do that, too!
We were out of town this weekend, so I just made a big batch of pulled pork and we’re making tacos until it’s gone!
I like Dawn’s idea of smoking and freezing meat. Cooked meat is handy to have when dinner prep time is short!
Sun: Golden squash soup, pretzel rolls
Mon: Salmon with pesto and lemon, rice
Tue: Crab stuffed flounder, wild rice, and green beans from local dinner delivery
Wed: Roasted turkey, mashed potatoes, carrots
Thu: Halibut, mixed vegetables
Fri: Omelets, toast, sliced apples
Sat: Out

Mon: De-boned chicken thighs stuffed with sticky rice (got this idea from the show “Family Dinners” with the episode featuring the Woks of Life (Leung) family); stir-fried zucchini with brown bean sauce

Thurs: Zucchini stuffed with smoked salmon and leeks with béchamel sauce

Sat: friend’s retirement party catered by The French Gourmet

Long time since posting. How have you all been? I’ve hit a meal plan rut so I’m back to this tried and true site of ideas.
I’m trying to simplify with a meal that stretches into leftovers the next day plan.
