Week 758 Weekly Menu

Hello! Apologies for missing last week…I run communications at my company and we announced a proposed merger, so basically I didn’t do much of anything but work. But I’m back to normal, thank goodness!

  • Spicy Chicken Tacos (going to grab the pre-marinated chicken thights from our local tortilleria)

    I’m trying to go simple and clean out a few odds and ends before the big feast next week!

    Sunday, Monday, Wednesday: Czech-style roast, cauliflower, and grilled peppers (adding potatoes on Wednesday if we run out of veggie sides)

    Tuesday/Thursday: Black-eyed pea burritos

    Friday/Saturday: Food from the freezer and/or grilled queso fresco cheese sandwiches with green chiles

    Monday- salmon, rice, asparagus and salad
    Tuesday- Indian spiced stuffed spaghetti squash and salad
    Wednesday – pasta with scallops and mushrooms
    Thursday- leftovers
    Friday – take out

    I’m emptying out my fridge and using up ingredients in the freezer because we leave to New York for Thanksgiving Break, so no grocery shopping this week.

    Su: beef & black bean chili w/ tortilla chips, cheese, sour cream, green onions, cilantro

    Tu: trip tip tacos w/ salsa, cheese, green onions, guacamole and papas & soyrizo

    W: mandarin orange chicken w/ steamed rice and garlic edamame

    Th: pasta e fagioli soup w/ cast iron cheesey garlic bread sticks

    Tuesday: Leg of Lamb with Spicy Green Sauce and Bean and Radicchio Salad

    Wednesday: Chicken Francese with Pesto Linguine and Broccoli

    Thursday: Ziti al Forno and Salad

    Friday: Chicken Picatta and Garlic Bread and Peas

    Saturday: Baked Chicken Cacciatore and Broccoli

    Sunday: Dinner Fundraiser Event–Out

    Mon: Pork and savoy cabbage meat loaf (another Marcella Hazan recipe)
    Tues: Single-pan roasted chicken breasts, butternut squash and potatoes with herbs de provence
    Wed: Seafood Newburg (found online, apparently Tom Ham’s Lighthouse recipe)
    Thurs: Oven-baked tonkatsu chicken, napa cabbage in dash (these are from a blog called Just One Cookbook. It was featured in an article last week in the SF Chronicle: incredible trove of Japanese recipes)
    Fri: leftovers
    Sat: Udon noodle soup

    Mon: Tomato soup with croutons
    Tue: Orange chicken, brown rice, green beans
    Wed: BBQ chicken stuffed sweet potatoes
    Thu: Bow tie pasta with parmesan sauce, shrimp, & peas, salad
    Fri: Leftovers
    Sat: Scrambled eggs, fried potatoes & onions

    Monday: Twice-baked Potatoes and roasted broccoli

    Tuesday: Chili in slow cooker

    Wednesday: Chorizo Enchiladas

    Friday: Pizza Night

    Sun: (potluck) corn casserole
    Mon: pot roast, potatoes, carrots
    Tue: cashew chicken with broccoli and l/o rice
    Wed: turkey ravioli, gravy, green beans, l/o casserole
    Thu: wonton soup with bok choy and pea pods
    Fri: chicken enchiladas, beans
    Sat: out
