Week 760 Weekly Menu

Long time no talk! The day after Thanksgiving marked the beginning of floor demolition in our house. Unsurprisingly, the past week has been insane. Hence, no menu plan last week. But we have our kitchen back now (yay!) and we are sick to death of eating out/spending money on takeout. It’s time to get back in the kitchen! Also, we have wood floors now and I feel so grateful and excited.

    We’re having red beans and rice and baked burritos this week, with some eating out planned for the weekend!

    How exciting — new kitchen!

    Sun: Chickpea stew with spinach and sausage (recipe from either the U-T or the Sac Bee)
    Mon: Cashew turmeric chicken over rice (in the Bon Appetit issue that arrived this week)
    Tues: leftovers
    Wed: leftovers
    Thurs: Ground beef, creamed corn and onion goulash (my childhood favorite)
    Fri: leftovers
    Sat: takeout

    We’re remodeling our staircase soon and I’m so excited but anxious about the mess.

    Mon: tomato bisque with grilled ham & cheese sandwiches

    Tu: chipotle chicken tacos with calabacitas, guac & chips

    W: stir fry fish & vegs in black bean sauce with rice

    Th: buffalo chicken drumsticks with veg salad & blue cheese dressing

    F: working… guys are ordering pizza

    Sa: Ugly Sweater Bunco night…meat & cheese platter, bacon wrapped dates, spicy cranberry meatballs, shrimp cocktail

    Su: bunco leftovers

    Tuesday: Chicken Piccata Pasta and Peas

    Wednesday: Mustard Pork Tenderloins with Maple Sweet Potatoes and Shallot Green Beans

    Thursday: Crunchwrap Supreme Copycat and Rainbow Citrus Salad

    Friday: Pork Marsala and Mashed Potatoes and Corn

    Saturday: Beer Brats with Onions and Maple Mustard Brussels Sprouts

    Sunday: Tandoori Chicken, Rice Pilaf and Naan and Peas

      also, pork marsala? what cut of pork and how do you prepare it?

      Jane,

      The original recipe called for pork chops, but I used a pork roast and cut it into cubes, seasoned and coated with flour, then browned. Then just cook similar to chicken marsala. My family still liked chicken marsala best :).

    Wednesday: Shepherd’s Pie (ATK Make Ahead)

    Thursday: Skillet Roast Chicken & Potatoes

    Friday: Dress Rehearsal (Jimmy John’s??)

    Saturday: Christmas Spectacular Dance Line Show!!!

    Glad your floor went in so quickly. I hope you love it! This week we’re having:

    — white bean soup w/bacon and greens
    — chicken, broccoli, mushroom risotto
    — smoked pork, spinach and beet salad
    — baked fish, l/o risotto, cauliflower
    — chicken pot pie
    — chili, cheesy cornbread
    — (out for holiday party)
    — making cookies for a potluck

    Love seeing what everyone else is making, too.

    • I can’t believe how fast we got the installers on the schedule and then that it took them only 10 days. if we’d done it ourselves it would have taken MONTHS. I feel so grateful!!

    Tue: Stuffed shells, salad
    Wed: French onion chicken, mashed potatoes, green beans
    Thu: Halibut, baked sweet potatoes, corn
    Fri: Tuna noodle casserole, salad
    Sat: Tomato soup and leftovers
