Hello! I’m getting a head start on my menu this weekend. This might be the first time I’ve done it on a Sunday! Also, heads up, I’m finally going to start posting on Instagram regularly, so if you’re on IG, come on over and let’s connect!
MONDAY:
- Mini Super Bowl Party (Cate and I have a school thing during real Super Bowl, so will make 7-layer dip, sweet Chex mix and watch commercial/game/half-time show highlights on Monday)
TUESDAY:
- Valentine’s Day…Nate and I have a fun dinner with friends and my girls are going to see Titanic…so dinner will be leftovers for the kids!
WEDNESDAY:
- Homemade hamburger night
THURSDAY:
- Bolognese with pasta
FRIDAY:
- White chicken chili (I will photograph and share the recipe soon!)
SATURDAY:
- Takeout night

- Leftovers

Sunday: Breakfast for dinner (Pancakes)
Monday: Leftover homemade pizza
Tuesday through Thursday: Fritos burritos
Friday: With friends
Saturday: TBD

Happy Super Bowl Sunday! We will check the score throughout the evening, but are not football or halftime show fans.
Sunday: turkey dinner* (turkey breast, roasted baby red potatoes and brussel sprouts, stuffing, and gingerbread cake for dessert) *Also, I love turkey, but I think we’re having this so I can get the turkey breast out of the freezer.
Monday: corn chowder (from freezer)
Tuesday: Lentil Baked Ziti
Wednesday: Turkey leftovers
Thursday: Get Your Own Dinner
Friday: Veggie Burgers, veggies (also to use up the veggie burgers from the freezer)
Saturday: Instant Pot Lasagna and garlic bread
interestingly I found myself in a school library watching the super bowl…while judging at a debate tournament. an unusual “party” to say the least! 😉
was just thinking about corn chowder…might have to make that soon!
Sunday: Sun-dried Tomato Chicken and Gralicky Roasted Broccoli
Monday: Roasted Butternut Squash Nachos and Fresh Veggies
Tuesday: Steak Au Poivre with Crispy Smashed Potatoes and Green Beans

Just roasted with olive oil and a little salt and pepper, it’s really yummy if you like squash, which I do 🙂
Sun: Korean beef tacos with Asian slaw and lots of guacamole and chips
Mon: Tamales, steamed artichokes
Tues: Stir-fry shrimp and broccoli
Wed: Korean beef tortas with Asian slaw
Thurs: leftovers
Fri: Tamales, green salad
Sat: Pork tenderloin with garlic cream sauce, broccolini sautéed with anchovies
oooo, I think I’ll add korean bbq tacos to our menu this week!
We are having our first-ever Restaurant Week in my little town and I am part of the community group that organized and promoted it. So, this coming week I’m not doing a menu. We are patronizing our restaurants and will dine out or get take out all week!
Here is what we’ve been eating this week (for some reason I started it on a Saturday):
Sat: Swordfish, fire roasted corn, salad
Sun: White chicken chili, cornbread
Mon: Chicken fajitas
Tue: Tortellini bake, salad, wine
Wed: Flounder, peas, baked spuds
Thu: Grilled chicken, mixed veggies
Fri: Shrimp, rice, and veggie one-pot meal
Sat: Leftovers
