Week 765 Weekly Menu

I completely spaced last week and didn’t realize I hadn’t planned until Tuesday! And the way we ate last week reflected that bad planning…a lot of eating out and “what should we do for dinner?”s at like 7:00 pm. It was no bueno. My brain is back in order, so here we go.

    — mac&cheese, salad
    — tilapia (maybe tacos), salad
    — corned beef dinner, popovers
    — chicken, vegetables

  2. Glad to have you back!….and that your family was fed! 🙂 I’m not traveling this month so I get to continue to cook my way through the new Smitten Kitchen cookbook. YAY!

    Sunday: Something quick….Dance Competition weekend!
    Monday: Falafel (Smitten Kitchen, p124)
    Tuesday: BLT Salad
    Wednesday: Pea, Feta, and Mint Fritters (Smitten Kitchen, p99)
    Thursday: Soy-Glazed Tofu with Crisped Rice (Smitten Kitchen, p129)
    Friday: Pizza night
    Saturday: Out

    • Those Smitten Kitchen recipes look delicious. Maybe that is another cookbook for me to look through once I finish my current ones. Thanks for sharing! Always great ideas in this group!

      Sarah, I HIGHLY recommend the “Keepers” cookbook. They’re simple and so good. Never a dud; always good for a weeknight dinner. 🙂

    Meal plans are helpful, even if they are hodge-podge, which ours is this week:

    Sunday-Breakfast (pancakes) for dinner
    Monday-Leftover tortilla soup and chips
    Tuesday-Leftover chorizo tacos
    Wednesday-Leftover grilled cauliflower steaks and curried brown rice and lentil pilaf
    Thursday-Whatever is leftover after the leftovers meals or frozen burritos
    Friday-Something for St. Patrick’s day
    Saturday-Maybe eating out or salads/sandwiches

    Sunday- slow cooker crack chicken on Hawaiian rolls, tossed salad
    Monday- shrimp scampi over linguini, broccoli,
    Tuesday- oven baked pork chops, au gratin potatoes, left overs salad
    Wednesday- red beans and rice with Conecuh sausage, coleslaw
    Thursday- slow cooker creamy tomato basil soup with croutons, grilled cheese sandwiches
    Friday- eat out
    Saturday- pressure cooked ribs, baked potatoes

    The weeks I don’t meal plan are always so hectic during dinner time. Happy to see you back 🙂

    Su: Went to watch the Mean Girls play for a friend’s birthday and had Italian dinner afterwards at Maggiano’s.
    M: leftovers
    Tu: green chicken enchilada stuffed spaghetti squash
    W: caprese chicken/pesto pasta/salad
    Th: orange glazed cod/spicy garlic edamame/rice
    F: St. Patrick’s Day dinner…Guiness cottage pie
    Sa: St. Patty’s Party at the neighbors…bringing Guiness cheddar dip & pretzels and Lucky Charms Rice Krispie Treats

    Tuesday: Pi Day! Bacon Cheddar and Potato Pies and Broccoli

    Wednesday: Feta Corn and Tomato Pasta and Sauteed Green Beans with Garlic

    Thursday: Salisbury Steaks and Mashed Potatoes and Chopped Winter Salad

    Friday: St. Patrick’s Day! Corned Beef and Cabbage and Irish Soda Bread

    Saturday: Guandules con Coco and Tostones

    Sunday: Piri Piri Chicken with Fresh Fruit Salsa and Banana Rice

    The theme for this week is what can we do with our CSA box? This week’s box had a particularly good variety of items — each meal has something from the box.

    Sun: Corned beef and colcannon
    Mon: Chicken pasta salad
    Tues: Seared ahi over salad greens
    Wed: Roasted medley of vegetables over stone-ground grits
    Thurs: leftovers
    Fri: Single-pan roasted chicken with potatoes and onions
    Sat: Calabsita and chorizo tacos

    Sunday – leftover bbq
    Monday – our usual! salmon, french fries and asparagus
    Tuesday – Pi day! Chicken Pot pie (Alison Roman), salad and cupcake sized apple and cherry pies
    Wednesday – Surprise special day for my husband
    Thursday – Pot pie leftovers
    Friday – St Patrick’s Day! Corned beef and cabbage with soda bread
    Saturday – steak and salad
