  • Smoked chicken, potatoes and salad (last Sunday we ended up with leftovers, so putting this back on the menu)

    Monday: Breakfast for Dinner–Eggs, Pancakes and Fresh Fruit

    Tuesday: Salisbury Steaks, Mashed Potatoes and Chopped Winter Salad

    Wednesday: Carne Asada Verde with Fresh Tomato Avocado Salsa and Quesadillas

    Thursday: Fish Tacos with Slaw and Sauteed Snow Peas

    Friday: Cheeseburgers, Ranch Potatoes and Roast Carrots and Shallots

    Saturday: Left Overs

    Sunday: Bard Dance Fundraiser–BBQ

    Sun: Pan seared chicken, arugula/fennel/lemon salad
    Mon: Bangers and mash, peas (was on my menu for St. Patrick’s Day, but we went out instead)
    Tue: Chicken potpie, salad
    Wed: Parsley butter halibut, mixed vegetables
    Thu: Salmon with lemon, wine sauce and green beans
    Fri: Tuna melts, sliced oranges
    Sat: Pizza

    Su: ordered in gourmet hot dogs from Dogs & Suds

    M: Trying to start up meatless Mondays again…huevos rancheros with black beans and guacamole & chips

    Tu: chicken pozole Verde with radishes, cabbage, cilantro, avocado, limes

    W: S&P shrimp with stir fry spaghetti squash

    Th: cheese stuffed chicken with marsala sauce over spaghetti squash

    Sa: leaving to Big Bear for the beginning of Spring Break… drive thru on the way up.

    Tu: lemon chicken, orzo with peas
    W: baked tilapia, sweet potato fries, salad
    Th: l/o corned beef, pumpernickel bread
    Fr: stir fry chicken and vegs over rice
    Sa: pork chops, potatoes

    Sun: Stir-fried noodles with soy gravy, bok choy, bean sprouts and homemade char siu (BBQ pork)

    Mon: Egg foo yung over rice

    Tues: Orecchiette with cauliflower and bacon (Lidia Bastianich recipe)

    Wed: Tofu and green bean stir fry with bean threads and Chinese sausage

    Thurs: leftovers

    Fri: leftovers

    Sat: Chicken adobo tacos and fideos

    Sunday – Corned beef hash with eggs (using up the leftover corned beef!)
    Monday РSalmon, rice, saut̩ed cabbage and salad
    Tuesday – Gkids over for dinner! Hot dogs, mac and cheese and salad
    Wednesday – Chicken with stir fried rice
    Thursday – shrimp scampi with spaghetti and salad
    Friday – take out!
    Saturday – tbd

    I somehow missed the menu post this week, but better late than never!

    Sunday: Breakfast (pancakes) for dinner-it’s becoming a habit, and a good one!
    Monday/Wednesday: Leftover St. Patrick’s Day grill out of sausage, cabbage steaks, and seasoned potatoes
    Tuesday/Thursday: Cheesy chili burritos
    Weekend: On a trip!
