Week 768 Weekly Menu

Hello everyone! I’m smack dab in the middle of some atypical weeks. This past week we went to Park City for Spring Break, and now I’m on the East Coast touring a couple of colleges with Cate. SOOOO…not much cooking and a whole lot of flexibility happening. But I wanted to put up a quick post so YOU can share your menus. Have at it and I’ll be back in action next week!

    Monday: Vegetable Soup and Barley Rolls

    Tuesday: Hubby’s B-day–Waffles, Fish Tacos, Burgers and Homemade Fries

    Wednesday: Philly Cheesesteak Mac N Cheese from Grandbaby Cakes new cookbook and Broccoli

    Thursday: Chipotle Short Ribs and Grits and Rhubarb and Cucumber Salad

    Friday: Thai Style Grilled Chicken with Crunchy Rice and Peas

    Saturday: Irish Lamb Stew and Roasted Brussels Sprouts

    Sunday: Youngest Son’s B-day–Fruit Smoothies, Taco Bell, and Chili Cheese Fries

    F: working my last day, so all friends and family will be there for a Goodbye party… chicken birria tacos

    Saturday: birthday girl chose her fav Mexican restaurent
    Sunday: huli huli pulled pork, sweet potatoes, salad, asparagus roasted
    Monday: grilled sausage, fettucini alfredo, salad
    Tuesday: meatball “subs” on Na’an bread, raw veggies
    Wednesday: chicken nuggets, mac and cheese, green beans
    Thursday: beef taco skillet, Mexican street corn casserole, salsa and chips
    Friday: YOYO/leftovers/whatever my husband cooks
    Extras: fresh berries, sliced apples, bananas, leftover birthday cake

    Safe travels and best wishes for your daughter as she selects her college!

    Our meals for the week are:

    Sunday/Wednesday: Spinach artichoke grilled cheese (Budget Bytes)
    Monday: Dinner with friends
    Tuesday: Beef and potato burritos (Sweet and Savory Food)
    Thursday/Friday: Mexican street corn pasta salad (Fit Foodie Finds)
    Saturday: Snack board dinner/TBD

    Good luck with the campus tours!

    Sunday – Veal Saltimbucca, asparagus, and spaghetti with salad
    Monday – Seared Tuna on salad
    Tuesday – leftover veal!
    Wednesday – Salmon, asparagus, rice and salad
    Thursday – Shrimp with rice and vegetables
    Friday – take out!
    Saturday – Baby Shower for my son and daughter-in-law!

  7. I was in New Hampshire & Boston last week!!! Makes me miss it. Enjoy your time out East. 🙂

    Hope the college tours and other travels go well. Have missed seeing everyone share their menus. This week is all super easy meals from the freezer, or with little prep. Giving myself a break!
