    Congrats to Cate and your family!

    Here are our menus:

    Sunday: Street corn pasta salad (Leftover from last week)
    Monday/Wednesday: Green chile strata and baked potatoes
    Tuesday: Smoky chicken burritos and corn on the cob
    Thursday: Instant pot beef and cheddar ranch potatoes
    Friday: TBD
    Saturday: Date night

    I’m still in a cooking funk. More easy meals this week.

    — tomato soup, leftovers
    — ham, fried potatoes, salad
    — dinner out (anniversary!)
    — cheese ravioli, salad (meatless)
    — pork chops, baked sweet potatoes
    — sub sandwiches
    — smoked chicken, cheesy corn

    Su: Asian BBQ wings, sesame noodle salad, sweet & spicy cauliflower

    M: Meatless Monday…chili relleno casserole and calabacitas

    Tu: turkey taco soup with quesadillas

    Th: chicken katsu with steamed rice and cucumber salad

    F: homemade pizza and salad

    Sa: oven baked brisket with coleslaw and baked beans

    Sun: Corned beef hash (I finally cooked that “spare” corned beef from St. Patrick’s Day).

    Mon: Stir-fry snow peas and fish

    Tues: Grilled chicken drums and sweet potato fries

    Wed: Stir-fry snow peas and Chinese Sausage with noodles (the snow pea plants went just crazy this year in the garden)

    Thurs: leftovers

    Fri: leftovers

    Sat: Chicken breasts with sun-dried tomato cream sauce, broccoli risotto

    Sun: Baked salmon with parsley, peas, & lima beans
    Mon: Spring pea soup, French bread
    Tue: Bolognese, salad
    Wed: Hoagies
    Thu: Salmon teriyaki, veggie fried rice
    Fri: Spiced chicken and dates, salad
    Sat: Community spaghetti dinner

    Sunday – Shrimp with indian spiced vegetables and rice
    Monday – Salad with roasted Salmon
    Tuesday – Thai green curry with chicken
    Wednesday – Pasta with scallops and salad
    Thursday – leftovers
    Friday – burgers and fries (Take out)
    Saturday – pizza and salad
