Week 770 Weekly Menu

Hello, all! Well, last week took quite the turn…Cate and I ended up driving to three universities in three days. Fun, exhausting, helpful, and completely blew up our meal plan and ability to cook dinner. So, lots of repeats from last week’s menu for us. But I didWhite Chicken Chili make the that was on the menu, which made for lots of great leftovers for when we were in a pinch!

    Sounds like a very busy season for your family!

    I’m dealing with some illness over here, but thankfully we have leftovers and prepped food to carry us over:

    Sunday: leftover homemade pizza
    Monday/Wednesday: Instant Pot beef and cheddar ranch potatoes
    Tuesday Thursday: Instant Pot chicken burritos
    Friday/Saturday: TBD

    Sun: Guadelopean pork confit (Saveur magazine recipe) over rice noodles, sautéed sweet bok choy (first time I’ve seen this variety of bok choy)

    Mon: Tomato beef chow mein (recipe from Made with Lau)

    Tues: “Old school pad gaprao” (another Saveur magazine recipe)

    Wed: leftovers

    Thurs: leftovers

    Fri: leftovers

    Sat: eat out

    Mon: Roasted sea bass, peas
    Tue: Peruvian entrée salad
    Wed: Spiced chicken and dates, green beans
    Thu: South of the Border entrée salad (Cinco de Mayo a day early)
    Fri: Egg and cheese sandwiches, fruit salad
    Sat: Halibut with garlic and lemon, corn on the cob

  5. Good luck with the college decision. I’m starting three weeks in a row at home without work travel!! Can’t wait to cook again….

    Sunday: Bacon-wrapped Pork Loin with Roasted Red Potatoes & Peach Sauce (One-Pan Wonders, p261) with roasted asparagus

    Monday: Ginger fried Rice with roasted broccoli

    Tuesday: Skillet Chicken Parmesan (Smitten Kitchen, p187) and Caesar salad

    Wednesday: Steak and Corn Tacos (Smitten Kitchen, p185) and roasted cauliflower

    Thursday: Breakfast for dinner (eggs, sausage, and toast)

    Friday – Saturday: Soccer tournament in TN; dance competition in MI…..divide and conquer kind of weekend!

    Garden time, so I’m trying to keep things uncomplicated this week, and make use of food we already have.

    — smoked chicken, corn
    — beef barley soup, fresh fruit
    — garlic butter chicken, green beans, maybe salad
    — baked sweet potato, black bean soup, maybe salad (meatless)
    — mediterranean take out (chicken, hummus, salad)
    — asian dumplings, brown rice and veg bowl, cold spring rolls
    — HM pizza

    Monday – Salmon with rice and broccoli and salad
    Tuesday – Rice, Ham and broccoli casserole with salad
    Wednesday – Seared Tuna steaks over salad
    Thursday – leftovers
    Friday – Mexican take out for Cinco de Mayo!
    Saturday – Burgers on the grill (fingers crossed for nice weather!
    Best wishes to Cate as she decides on a college! I work at a high school and seniors wore their college decision shirts on Monday!

    I can’t believe she’s this age either…my eyes turned bad with my pregnancy with her, which you discovered! Haha!! Time sure flies
