Week 774 Weekly Menu

Happy Memorial Day! Hope you all have some delicious food on the grill right now! This week is the quiet before the storm of graduation week, so going to really try to get some good cooking in!

    Sunday: Crockpot enchiladas and broccoli (made by my mom when we visited!)

    Monday: Coffee crusted steak with herbed corn salsa (How Sweet Eats recipe) and salad

    Tuesday/Thursday: Chili cheese burritos

    Wednesday: Leftovers or ??

    Friday: Green chile breakfast quesadillas (Budget Bytes recipe) or TBD

    Saturday: Date night

    Sun: Pizza with sausage, mushrooms and fennel (I love the Trader Joe’s fresh pizza dough)

    Mon: Grilled twi-tip, pinquito beans, fingerling potato salad with Green Goddess dressing

    Tues: Carne asada tacos (a local grocery store mislabeled some meat as tri-tip and I have to use this cut for tacos), videos in tomato sauce

    Wed: leftovers

    Thurs: leftovers

    Fri: Grilled pork chops, broccolini sautéed with garlic

    Fri: leftovers

    Sun: Chicken fajitas
    Mon: Classic outdoor picnic cookout for Memorial Day and a bday party for my Mom.
    Tue: Beef stroganoff for my husband. Chop salad for me.
    Wed: Big salad with shrimp, goat cheese, walnuts, & blackberries
    Thu: Lemon cod, peas & carrots
    Fri: Egg salad sandwiches, cantaloupe
    Sat: With family. Not sure what we’ll be eating.

    I’m jealous of your bbq brisket. I looked for one in my freezer but did not have one. Trying to get back in the routine this week. We have an abundance of lettuce, blueberries, and strawberries now.

    — grilled chicken, salad, l/o broccoli
    — chili dogs, slaw, strawberry shortcake
    — l/o dirty rice, l/o corn bread, salad, strawberry shortcake
    — beef tips stir fry, asst vegs, rice, blueberry bread pudding

    Even your “leftovers” and “whatever I have in the cupboard” nights sound appealing. I love how resourceful you are in using up ingredients and supporting a good cause with your Indian food night. Seriously, this gives me major meal planning envy! Did you get a chance to share Cora’s taco recipe or that white chicken chili? I’m always looking for new favorites. Anyway, have a great week (and enjoy a small world cup!), and enjoy all that delicious food!
