Featured Recipe: Cucumber Sandwiches

These cucumber sandwiches are one of my sister-in-law Cora’s favorite recipes, so we made them for her baby shower last week. They were mighty delicious and very easy to throw together, so thought I better share the recipe with you! Great for parties, and nice and light in the summertime.


Featured Recipe: Cucumber Sandwiches

Recipe type: Main Dish, Sandwiches
  • Sliced cucumbers (pretty thin, with skins ON)
  • Cream cheese
  • Package powdered italian dressing mix
  • Bit of milk – about 1 Tbsp
  • Party-sized pumpernickel (I just learned about this bread – they come small and square like this, in the bread section at the store”¦the brand we bought was called Wild’s Party Pumpernickel)
  • Dill (dried is fine)
  1. Soften cream cheese at room temp, mix in salad dressing mix and enough milk to make the cheese spreadable. Spread on bread, top with sliced cucumber. Sprinkle with dill. Voila!



  1. What a tempting plate of cucumber sandwiches! I love them for summer parties – simple and refreshing. Must be a Cora thing!

    I like to pull the tines of a fork down the length of the unpeeled cucumber, all the way around, before slicing – makes them look a little like flowers.

    I hate how much I love these. My mom has made something similar and they are delicious. The problem is there is just no way to look manly wolfing down cucumber sandwiches.

      I really wish the amount of cream cheese and the size of the package of Italian dressing were actually specific.

  5. I make these too and love them, but have never tried adding the italian dressing powder. I’ll have to do that next time. Cucumber sandwiches are just so easy!

    These could also be made with powdered Ranch dressing mix instead of Italian…So yummy!!

    These sound great. I am assuming that you are using 8 ounces of cream cheese to one package of the dressing mix.

    I have made this recipe in a similar fashion using ranch instead of italian, but sprinkling Greek Seasoning over the cukes instead of dill. Very tasty!

    I am going to a St. Patrick’s party and the requirement is to bring “green food” and since I am not good at mixing food coloring to make green, I thought this would be PERFECT!! Also, I am not that crazy about that much green food coloring…can’t WAIT to make these!! Thank YOU!!

    Aloha! I made this for a Christmas tea party and added half of a red grape tomato on the top to give it a green and red appeal! Beautiful and Delicious! Mahalo for the recipe….

    I have made these with a little mayo in cream cheese and there is rye and pumpernickle cocktail light and dark breads…. sprinkled some with parsley and some with paprika.. for green and red for Christmas

    I love making these cucumber sandwiches for summer parties. Men and women alike love them. I vary what i add to the cream cheese about every time I make them. Use your imagination. I rarely leave off the shake od dill on top because it tastes fabulous with cucumber.

    How far in advance do you think you can make these before they get soggy??


    • I wouldn’t make them the day before, but I think you’re safe to make them any time the day of your party since the bread is pretty thick and the spread is cream cheese, which isn’t super wet. maybe have the cucumbers sliced and ready to go in a separate container and throw them on at the last minute!

    How many little pumpernickel sandwhiches does this recipe make?

    • that’s a good question, mirandah – you can really make as many as you want. we buy the bag of bread and use it all up – I have tried and tried to find online how many pieces of bread are on the package but can’t find an exact number, but I think most packages are 12 – 16 ounces and probably have about 40 slices of the little breads. one block of cream cheese is good for one package of bread. hope that is helpful!

    I’ve made this for over 40 years. The only difference is using a few dashes of hot sauce and no milk. The party rye or pumpernickel is often difficult to find and is rather dry. Over the past few months I’ve made some changes that we love. I use regular, Pepperidge Farms swirled pumper rye lightly toasted. I peel the cucumber, remove the seeds and finely mince it (pulsing in my mini chopper) it becomes a wonderful spread with all of the same flavors. I do let it sit in a fine sieve to drain any remaining liquid. It’s easier to spread and I just cut the bread into 6 or 8 pieces for appetizers. So much quicker and it also makes a yummy spread on sandwiches!

    Hi if my party is for 4pm….. can i spread it on the bread(leaving the cucumbers out) lets say at 10 am? do i leave it out or put it in the fride?

    • So, I checked with Cora to see what she thinks. She and her family members have always made this closer to the party so as not to make the bread soggy. That said, it is cream cheese with just a bit of milk added…the bread will probably hold up pretty well, even if you spread it on in the morning for the afternoon. I would maybe do a test run with one piece prior to the day of the party to see!

      if it does work out, I would probably keep them in the fridge – if you’re making them at 10 and serving at 4. then I would take out of the fridge about an hour before so the cream cheese can soften up and the bread isn’t cold.
