Holidays: Easter Feast

Easter is less than a week away – time sure does hop! (groans from the audience)

What are you having for dinner this Easter Sunday? Does your family have any yummy traditions or recipes? Please share! (And take a look at people’s menus already posted… some yummy ideas there already)

Just a couple quick resources for you. Emily (last week’s guest blogger) sent me this great link, He has tons of cute Easter ideas and free downloads to implement them. And of course, Martha Stewart has a plethora of recipes that look very Easter-y. I know, not very original, but hey…she’s good. What can I say?

By the way, if you want to do a traditional ham the easy (and less expensive than “Honey Baked”) way, Costco has good hams that come with a glaze. Watch it, though – we cooked it LESS than the time on the label last year and it was too long… got a little dry. But that was our fault.

Here’s my menu, at least for now… may change before Sunday!
Ham & Potato Bake
Carrot Vichyssoise
– Asparagus (looking for a “fancy” recipe, but may just simply sautée)
– Spinach salad with grapefruit and Brianna’s Blush Wine Vinaigrette
Rhodes frozen dinner rolls (if your grocer carries these, buy them, they are AWESOME – seriously as good as homemade)
Chocolate Bread Pudding

    Well, we’re having Easter dinner at my mother-in-law’s house. She’s making:
    -Grilled Lamb Chops
    -Grilled Asparagus
    -Homemade Banana Pudding

    And we’re bringing some type of potato gratin that I have yet to come up with (yikes!) and a cream cheese pound cake with homemade strawberry whipped cream. I’d appreciate any potato suggestions!

    I am lame on Easter. I can’t get behind eating lamb because I feel like we’re eating Jesus, and then ham and I are not totally crazy about each other. We do a roast chicken and Rhodes rolls and then I experiment with everything else. I want to make this coconut cake this easter, it’s gorgous looking.

    I am excited about the eastery treats and crafts this week though. We are doing some tonight with the kids and it should be fun. Thanks for the links.

    This is still a work in progress, BUT this is what I am thinking of doing….

    Spinach & Strawberry salad
    Scalloped Potatoes
    Whole Wheat Rolls
    Honey Glazed Ham
    Tangerine Chiffon Pie (new recipe)

    I just found this site and it looks fun, with lots of good ideas.

    For Easter, we are having ham, baked beans, hot cross buns, whipping cream potatoes, deviled eggs and a lemon cake out of the latest Cooks Illustrated mag. Hopefully someone else in my family will bring something green!

    If you are looking for a yummy potato recipe, we have one we use for holidays that is divine. Buy frozen, shredded hash brown potatoes, put a layer in a baking dish, sprinkle salt over the potatoes, continue layering potatoes and salt until dish is 3/4 full. Pour heavy cream over all until potatoes are not quite covered. Bake at about 300 degrees for several hours until done. They will be golden brown and a little crunchy on top but creamy and yummy under the crust. If you are using a dish the size of a 9 x 13 cake pan, you will use about 3 cups of cream.

    I am very traditional when it comes to holidays, so here is our Easter meal…

    Pork roast and applesauce
    Au gratin potatoes
    Cooked carrots
    Strawberry pie

    PS. Here is our au gratin potato recipe. No necessarily the healthiest, but definitely delicious!

    1 bag frozen hash browns
    1/4 c. chopped onion
    8 oz. grated cheddar
    10 oz. cream of mushroom
    10 oz. cream of chicken
    small container sour cream
    1/2 c. cornflake crumbs
    1/4 c. melted butter (I use less, or none at all)

    Combine first six ingredients in 9 x 13 pan. Sprinkle with cornflake crumbs and drizzle butter over top. Bake 30-45 min. (350 degrees).
